In this hands on workshop, Peter Glantz teaches you to make crunchy, tangy sauerkraut similar to what you get in Eastern Europe or in a New York Deli. The difference is that your results will be fresher and unique to you. You learn a simple, no-nonsense, and fun approach to making sauerkraut.

Making kraut puts you inside a story as old as civilization. Fermentation is connected to the origin of agriculture, alchemy, and the current movement toward localized, sustainable, and healthy communities. By understanding the story of sauerkraut and it’s connection to human history the experience of making it becomes deeper and more fulfilling. Fermentation empowers you to preserve your own vegetables the way our ancestors did - no electricity or heat canning required. And, it’s delicious!

The workshop is geared toward beginners and experienced fermenters who want to make a more consistent, quality sauerkraut or expand their understanding of the art of fermentation. Included in the fee are a glass jar and a custom ceramic weight made by Peter’s wife - Providence artist Meredith Stern. This starter kit and the knowledge from the class gives you everything you need to make sauerkraut at home.
