Humans have had a close connection with animals like chickens, cows and pigs for ten thousand years, but agriculture has changed dramatically in the last century. This talk will look back at our relationship with these species, from the development of breeds to the modern pivot away from heritage livestock. Today these breeds are increasingly rare, all but forgotten in an era of factory farms that emphasize uniformity over biodiversity, tractability over intelligence, and fast weight gain over nutrition or, of all things, flavor. Against a backdrop of these industrial trends, I will look at the obstacles and opportunities for heritage livestock breeds continued place in a sustainable farming, and why, paradoxically, we must “eat them to save them”.
