Marvelously Marinated Veggies
So glad to be a part of the Woonsocket Patch Team! Here's a delicious and healthy recipe that's quick, easy, and fits into your budget.

Hi! I'm very excited about joining the Woonsocket Patch Team. My name is Miranda and I've lived in Woonsocket my whole life, although I currently rent a house down in Narragansett while I go to school at the University of Rhode Island where I'm studying Education and English. My hobbies are cooking, photography, and (of course!) blogging.

Last night I was completely exhausted after getting home from CVS, where I work as a Photo Technician. Luckily, I had this delicious and easy recipe already half-made and waiting for me in my fridge. This is definitely a recipe I’ll keep around for those days when I don’t feel like putting a lot of effort into my dinner, but don't want to pig out on Wendy's either. It’s so healthy and easy!

Marvelously Marinated Veggies (adapted from Taste of Home magazine June/July 2011)

Ingredients:
- 1 bag of Steam-Ready (Stop&Shop brand – $1.50) veggies – broccoli, onions, red pepper, mushrooms
- 1/2 cup uncooked rice
- 1 cup vinaigrette dressing (I used Cain’s Lite White Wine Honey Vinaigrette – amazing!)
Directions:
- Microwave the vegetables according to package directions.
- Transfer the vegetables from the package to a large baggie and cover with dressing. Let marinate in the refrigerator (Taste of Home suggested 30 mins, but I let them sit for over 1 day and they were perfectly fine and not over-marinated).
- After the vegetables are done marinating, cook rice according to package directions.
- Meanwhile, let veggies drain in a colander while preheating a skillet. Sauté vegetables with olive oil and salt for about 5 minutes.
- Combine vegetables with cooked rice, and serve!
