Directions:
Remove green stems from cauliflower, rinse off and cut up into medium size pieces. Chop up shallots. Toss both ingredients in pan add in ½ of the container of the vegetable, simmer on medium heat until tender. Transfer ingredients to a blender, pour in the remaining half of vegetable broth and the chia seed. Make sure that the lid is on tight. Blend on high until ingredients are smooth. Transfer soup mixture into a clean pot and reheat. Salt and pepper to taste. Severs plenty.
