  2. On Friday, Jan. 28, Inspire Real Estate Development LLC and Williamson County and City of Austin officials "held a private groundbreaking for the Pearson Ranch development, northeast of West Parmer Lane and SH 45." Construction has already begun on the first phase of the 41-acre Pearson Ranch mixed-use hub north of the capital city, near the Apple campus. 3. On Monday, Jan. 31, Amelia Raley sadly announced that her Sweet Ritual Vegan Ice Cream Shop located in North Austin "would be suspending operations due to the COVID-19 pandemic." In 2011, Sweet Ritual opened in the Juice Land location at 45th and Duval in Hyde Park and then in 2016, Raley and then-business partner Valerie Ward opened their own space at the present location 4631 Airport Blvd., Ste. 125. Then in 2020, "Raley partnered with L'il Nonna's vegan pizza truck to open Big Nonna's pizza and ice cream in north Austin." Regarding the shop's closure, Raley said, "Taking this time off allows us to best serve you for the coming year by making a plan for a post-pandemic world, and to take a well-deserved mental health break. We are confident that this is going to be a temporary suspension." For more information, visit: (Austin Chronicle)
