Rooted in the culinary traditions of western Sicily, busiate
is a hand-rolled pasta closely associated with Trapani. Made from semolina flour and water, each strand is traditionally wrapped around a slender ferretto, creating its distinctive spiral shape.
Inside Yolan’s kitchen, guests will craft fresh pasta by hand while learning the traditional technique used to shape busiate, along with the regional traditions behind this Sicilian pasta and its classic pairing with pesto alla Trapanese.
Each guest will prepare fresh busiate to take home, with techniques and recipes for recreating the dish.
Following the lesson, enjoy a three-course lunch featuring seasonal salad, busiate with pesto alla Trapanese
prepared by Yolan’s culinary team, dessert, and curated wine pairings.

Long before many of Italy’s celebrated wine regions rose to prominence, vines were already taking root in Campania. Introduced by Greek settlers more than two thousand years ago, the region’s enduring wine culture has been shaped by volcanic soils, Mediterranean influence, and indigenous grape varieties cultivated across generations.
In this guided tasting, guests will explore the remarkable wines of Campania and the native varieties that have defined the region for centuries, from the depth and structure of Aglianico to the elegance of Fiano and vibrant minerality of Greco. Each pour offers a distinct expression of Campania’s landscape and a living connection to one of Italy’s most historic winemaking traditions.
Led by Wine Director Nicole Lee, this tasting is part of Yolan’s monthly wine and spirits series exploring the regions, traditions, and stories that continue to shape the world of wine.
