BorekG Brings a Mediterranean Taste to Wakefield Market

Dilek Kaygusuz, originally from Turkey, brings food from her homeland to Wakefield Market for all to enjoy.

Many vendors at the Wakefield Farmers Market offer products that make great ingredients in meals; However, Dilek Kaygusuz of BorekG offers unique finished products that originate from the Mediterranean.

Kaygusuz came to the United States with her family from Turkey in 2001, and decided to apply to be a vendor at local farmers markets after enjoying the markets from a customer’s perspective. “I came here once and really enjoyed walking through the market,” Kaygusuz said, “I decided that I wanted to give it a try, and my family was very supportive.”

Kaygusuz does all of the cooking herself while her three sons help her package and label all of her products. “I like to do all of the cooking myself, because that way I know that it will be done right. I don’t think my sons could do as good of a job preparing my recipes as I do,” Kaygusuz said.

The name BorekG comes from an item that Kaygusuz sells at the Market. “A Borek is a thinly rolled pastry dough wrapped around a savory filling. Adding a ‘G’ to the end turns it into ‘Maker of Borek.’ It adds ownership to the product for me,” Kaygusuz explained.

Kaygusuz’s products have gained popularity in the market. “I really like BorekG’s avocado salad and hummus. The avocado salad is probably my favorite, because it has the boldest taste. All of her products are very flavorful,” said Alex Marshall, one of BorekG’s customers.

Because of Wakefield Farmers Market’s afternoon timeslot, locals Valli Shepherd and Patrick Stover have made BorekG their Wednesday lunch. “Every week since the market opened, we’ve come to BorekG for lunch,” Shepherd said. “Her foods are simple, but amazingly good. There’s nothing I don’t like here. I have a different favorite every week. I love her red lentils and avocado salad.” BorekG also has a blossoming online following on their Facebook page.

Being a farmers market vendor has given Kaygusuz a lot of freedom. “I love being my own boss in my own business,” Kaygusuz said. “Nobody tells me what to do, I’m free. I really enjoy helping people try good Mediterranean food, and I want my customers to feel like they are getting what they pay for.”

Kaygusuz hopes to take being her own boss to another level in the future. “I hope someday to have a small café style restaurant. I’d like to be able to serve my food fresh out of the oven, so that customers can enjoy my cooking even more,” she said.

BorekG offers many items including but not limited to: flatbread, lentil and couscous salad, eggplant salad, and the ever-popular baklava.
