Arlington Restaurant Inspections: Sneeze Guard, Rodents, Dirty Nozzles
Arlington County Public Health officials recorded violations at several food establishments during inspections between Sept. 1 and Sept. 20.
ARLINGTON, VA — Several facilities in Arlington recorded violations during recent inspections from the Arlington County Public Health department. Inspectors conducted the most recent visits between Sept. 1 and Sept. 20.
In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.
Depending on the results of the inspection, the health department can pursue several actions.

They can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or they can temporarily shut down an establishment until certain issues are solved.
The Virginia Department of Health only recommends restaurants have their permits suspended when "the continued operation of the foods ervice presents a substantial and imminent threat to the public health."

Corrective Actions: Provide a written plan for employees to follow when responding to a vomiting or diarrhea events with discharge of vomitus or fecal matter onto food surfaces that includes the procedures for cleaning and sanitizing affected areas, disposing of the discharge and contaminated food items, and protecting employees while they respond to a vomiting or diarrheal event.
- The date on which the last shellstock from the container is sold or served was not recorded on the tag or label. Corrective Actions: Ensure that shellstock tags are labeled with the date sold.
- Observed that can opener is in need of cleaning. Corrective Actions: Clean can openers frequently to ensure that surfaces do not accumulate food debris.
- Chicken wings and crab stock was not cooled below 41F within 6 hours. Observed chicken wings at 51F, crab stock at 51F in walk in cooler, and PIC stated that foods were prepared yesterday. Corrective Actions: Potentially hazardous foods shall be cooled from 135°F to 70°F within two hours and to 41°F within a total of six hours to prevent the growth of harmful bacteria. Foods that have been temperature abused are to be discarded.

- Trash dumpster lid observed in poor repair. Corrective Actions: Replace the door of the outside refuse container with one that is a tight fit.

- Yellow rice (62F) were not cooled from 135F to 41F or less within a total of 6 hours. The PIC voluntarily discarded the rice. Corrective Actions: Potentially hazardous foods shall be cooled from 135°F to 70°F within two hours and to 41°F within a total of six hours to prevent the growth of harmful bacteria. The bar right 2-door counter refrigerator condenser was frozen over. Repair this unit to hold foods at or below 41 F. Don't store foods in the bar keg refrigerator (left 2-door counter refrigerator unless there is a thermometer and the unit is holding 41 F or below). If the cream cheese can't stay 41 F or below at the breakfast bar, have written procedures using time as a public health control and discard leftovers after service.
- Dish racks, shelves, cutting boards, bottle of oil, etc. stored on the floor. Corrective Actions: Cleaned equipment and utensils and laundered linens shall be stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust or other contamination; and (3) At least 6 inches above the floor. Clean equipment and utentsils shall be stored: 1) In a self-draining position that allows air drying; and 2) Covered or inverted.
