Rodent Droppings, Fly On Salad Bar: Arlington Restaurant Inspections

ARLINGTON, VA — Arlington County regularly conducts inspections of local restaurants. Reports are generally posted about a week after the inspection. We've listed the critical violations from inspections at Arlington restaurants on April 26, the most recent date available.
Rien Tong Thai Cuisine, 3131 Wilson Blvd
Date: 4/26
Critical violations: 3
Notes: In addition to the three critical violations, there were 15 non-critical violations, mostly having to do with the general cleanliness of the restaurant. The inspector also found rodent droppings.

Critical violation No. 1: Observation (CORRECTED DURING INSPECTION): Ready-to-eat food is not protected from cross contamination by separating them from raw animal foods. Observed raw chicken over ready-to-eat foods in the walk-in cooler.
Critical violation No. 2: Observation (REPEAT) (CORRECTED DURING INSPECTION): Observed food (dumplings 55 F, cream cheese wonton 55 F, spring rolls 55 F) cold holding in the two door counter refrigerator at improper temperatures. foods were discarded.

Critical violation No. 3: Observation (CORRECTED DURING INSPECTION): Poisonous or toxic materials are not stored so they can not contaminate food by separating with spacing or partitioning. Observed cleaners stored with food.

Notes: The inspector also listed eight non-critical violations, including mouse droppings spotted in the dry storage room.
Critical violation No. 1: Observation (REPEAT): The dishwashing is not sanitizing, call for service and use the 3-part sink to sanitize.

Notes: Five non-critical violations were also listed, including one which dinged employees for wearing jewelry on their arms and hands while preparing food.
Critical violation No. 1: Observation (REPEAT) (CORRECTED DURING INSPECTION): Foods (sliced tomatoes, sliced meats, sliced cheeses) inside the sandwich prep unit and shredded lettuce and chicken inside the two door counter refrigerator are cold holding at the improper temperatures of 45-50F; ice was added to the sandwich prep unit and foods in the two door counter refrigerator were relocated to the walk-in refrigerator.

Notes: The seven non-critical violations also listed were mostly random, including one instance of a fly that was spotted at the salad bar.
Critical violation No. 1: Observation (REPEAT) (CORRECTED DURING INSPECTION): Turkey and cheese on ice at the prep unit cold holding at the improper temperatures of 45-49 F; keep completely surrounded with ice.
Critical violation No. 2: Observation (CORRECTED DURING INSPECTION): Shell eggs not treated to destroy all viable Salmonellae were not stored in a refrigerated unit with an ambient air temperature of 45ºF or less.

Notes: The seven non-critical violations mostly had to do with cleanliness and lighting.
Critical violation No. 1: Observation (CORRECTED DURING INSPECTION): A food employee failed to wash his or her hands when switching between working with raw food and ready to eat food.
Critical violation No. 2: Observation (CORRECTED DURING INSPECTION): Chili, found at 52-63F, was not cooled within a total of 6 hours from 57ºC (135ºF) to 5ºC (41ºF) or less.
Critical violation No. 3: Observation (CORRECTED DURING INSPECTION): The food establishment is not under the immediate control of a Northern Virginia certified food manager.
