Major Raw Chicken No-No | Arlington Restaurant Violations

Arlington County reported violations at Pizza Pie Me, Rus Uz, and others May 22-25.

ARLINGTON, VA — Arlington County regularly conducts inspections of local restaurants. Reports are generally posted about a week after the inspection. We've listed the violations from inspections at local restaurants -- including raw chicken being stored in a very unsafe way at Universal Gourmet -- from May 22-25, the most recent dates available.

Pizza Pie Me, 2249-E South Shirlington Road

Critical violation: Observation (CORRECTED DURING INSPECTION): Cut lettuce and individual packages of blue cheese dressing with labels that state, "Keep Refrigerated" cold holding at the improper temperature of 72 F were discarded. Pasta and chicken in the walk-in refrigerator cold holding at the improper temperature of 46 F; thermostat was adjusted from 41 F to 34 F; air temperature of unit went from 46 down to 40 F during my inspection.

Critical violation: Observation (CORRECTED DURING INSPECTION): Yogurt (48F), milk (48F), and sour cream (45F) from the previous night cold holding at improper temperatures in the small GE refrigerator. The refrigerator was unplugged. The CFM voluntarily discarded the food and plugged the refrigerator in.

Critical violation: Observation (CORRECTED DURING INSPECTION): The food establishment is not under the immediate control of a Northern Virginia certified food manager. The CFM arrived during inspection.

Non-critical violation: Observation (REPEAT): Surfaces of the soda dispensing gun and the ice chute at the bar are not clean.

Philipine Oriental Market & Deli, 3610 Lee Hwy

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed a food employee wash their hands the three compartment sink. Educated and trained the CFM where to properly wash hands.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed raw frozen fish thawed in their package in water sitting on the counter. Educated and trained the CFM on proper thawing methods. The CFM removed the fish from the package and cooked it.

Non-critical violation: Observation: The nonfood-contact surface of the cabinets throughout the kitchen and inside the refrigerators are not kept free of an accumulation of dust, dirt, food residue, and/or other debris.

Non-critical violation: Observation (REPEAT): The flooring in the dry storage room is in poor repair.

Arlington Kabob Sandwich, 5046 Lee Hwy

Violations: 3

Critical violation: Observation (CORRECTED DURING INSPECTION): Sliced tomatoes (53F) and cut lettuce (55F) placed in the cooler three hours prior cold holding at improper temperatures in the 2-dr prep refrigerator. Instructed the CFM to use Time as a Public Health control and discard the items in one hour at 2:30pm.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): Observed a food employee wash their hands and the three compartment sink. Observed a soap dispenser at the three compartment sink. Instructed the CFM to educate the employees on where to wash their hands and to remove the soap dispenser at the three compartment sink.

Non-critical violation: Observation (REPEAT): Observed old containers of Windex being used for bleach without a common name. Replace bottles that have been previously used for other toxic materials and add label the container.

Holiday Inn-National Market, Fresh Kitchen and O'Malley's Bar, 2650 Jefferson Davis Hwy 1st floor

Violations: 5

Critical violation: Observation (CORRECTED DURING INSPECTION): Observed burgers (55ºF) improperly cold holding in the refrigeration drawers (#5) under the flat top grill. The person in charge voluntarily discarded all the meat in the drawers.

Critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): Observed the dish machine to be dispensing less than 50ppm chlorine sanitizer. A new bucket of sanitizer was hooked up during the inspection but still dispensed less than 50ppm chlorine. A service call was made during the inspection. Until the dish machine is repaired all dishes will be sanitized in the 3-compartment sink.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): The handwashing sink at the server station is being used as a dump station. Observed ice in the basin of the sink.

Non-critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): No soap was provided at the hand sink by ice machine and the hand sink at the bar.

Non-critical violation: Observation (REPEAT) (CORRECTED DURING INSPECTION): No paper towels were provided at the banquet hand sink.

Universal Gourmet, 2733 South Crystal Drive 102

Violations: 3

Critical violation: Observation (CORRECTED DURING INSPECTION): Ready-to-eat food is not protected from cross contamination by separating them from raw animal foods. Observed raw shell eggs stored of cut peppers in the prep refrigerator opposite to the fryer. Observed raw pork and raw chicken stored over broccoli in the walk-in cooler. All units were rearranged and a handout was provided.

Non-critical violation: Observation (CORRECTED DURING INSPECTION): The food-contact surfaces of the food slicer used three hours prior are not clean to sight and touch. The CFM instructed a food employee to wash and sanitize the slicer.

Non-critical violation: Observation: Surfaces of the soda dispensing nozzles are not clean.
