Arlington County Public Health officials recorded violations at food establishments during inspections between Feb 29 and March 6.
ARLINGTON, VA — A number of facilities in Arlington recorded violations during recent inspections from the Arlington County Public Health Department. Inspectors conducted the most recent visits between Feb. 29 and March 6.
In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.Depending on the results of the inspection, the health department can pursue several actions.
They can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or they can temporarily shut down an establishment until certain issues are solved.

The Virginia Department of Health only recommends restaurants have their permits suspended when "the continued operation of the food service presents a substantial and imminent threat to the public health."

- Missing hand washing sign at front hand sink and can no longer read the one's in the rest-rooms. The sign that notifies food employees to wash their hands is not clearly visible. The men's rest-room was out of paper-towels. Corrective Actions: Provide a sign or poster that notifies food employees to wash their hands at all handwashing lavatories used by food employees. Keep paper-towels in the dispensers.
- Diced eggs and chicken in the 2-drawer prep ref. and shredded lettuce in the left "True" 1-dr prep ref. cold holding at 50-57°F; relocated to another refrigerator. Corrective Actions: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
- Couldn't read thermometer inside the 2-drawer prep refrigerator. Corrective Actions: Provide an easily readable thermometer so employees can accurately read the thermometer.
- Flies (small) and immature "German" cockroach observed in kitchen. Corrective Actions: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
- Middle prep refrigerator cutting boards are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition. Corrective Actions: Repair or replace the cutting boards to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the @EQUIPMENT@, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
- 2-drawer prep refrigerator and "True" left 1-dr prep ref. aren't keeping foods at or below 41°F; repair or replace to do so. Soda/drink counter cabinet doors are no longer in good repair. - Shrimp and meat observed thawing in buckets of water. Corrective Actions: Thaw potentially hazardous foods by either of the following methods: 1. Under refrigeration that maintains food temperature at 41°F 2. Completely submerged under running water at a temperature of 70°F or below with sufficient water velocity to agitate and float off loose particles in an overflow 3. As part of the cooking process
- Bulk spice containers in basement are not labelled with contents. Corrective Actions: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds. The mistaken use of food from an unlabeled container could result in chemical poisoning.
- Rodent droppings observed in corners and under equipment in basement. Corrective Actions: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by using methods such as trapping devices or other methods as required.

- Mouse droppings observed in the storage room; roach droppings & dead roach pieces observed on kitchen walls by the three part sink. Corrective Actions: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
- Mall food court back hallway doors leading to the loading docks aren't kept closed, self-closing, nor tight fitting. Corrective Actions: Protect the food establishment against the entry of insects and rodents by: 1. Filling or closing holes and other gaps along floors, walls, and ceilings; 2. Closed, tight fitting windows; and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
- Mall trash/recycling dumpsters aren't kept covered. Corrective Actions: Cover all waste containers when not in continuous use.
- Mall back hallways have damaged floor tiles and base tiles. Corrective Actions: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

- Observed frozen chicken being thawed in prep sink, not completely submerged in running cold water. Corrective Actions: Potentially hazardous foods (time/temperature control for safety food) shall be thawed using one of the following methods: 1) under refrigeration that maintains the food temperature at 41°F or less, 2) completely submerged under running water at a water temperature of 70°F or below with a sufficient velocity to agitate and float off loose particles of food as long as held for period of time at a temperature of 41°F or less, or 3) as part of a cooking process if the food is cooked as specified by Law or thawed in a microwave oven and immediately transferred to a conventional cooking process.
- The entire kitchen floor needs re-grouting; also observed some cracked and broken tiles on cookline. Corrective Actions: Repair or replace the cracked and broken floor tiles and re-grout the entire kitchen floor.
