Squid Thawing Improperly + Dirty Ice Machine: Health Inspections

Arlington County health inspectors reported numerous violations and recommended corrective actions at a number of restaurants recently.

ARLINGTON, VA — A number of facilities in Arlington recorded violations during recent inspections from the Arlington County Public Health Department. Inspectors conducted the most recent visits between March 9 and March 13

In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.Depending on the results of the inspection, the health department can pursue several actions.

They can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or they can temporarily shut down an establishment until certain issues are solved.

The Virginia Department of Health only recommends restaurants have their permits suspended when "the continued operation of the food service presents a substantial and imminent threat to the public health."

  • The sautĂ© prep table and sink as well as the hand sink across from the warewashing area are no longer fully sealed to the wall. Corrective Actions: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
  • The prep unit was observed not properly maintaining temperature. Corrective Actions: Repair or replace the prep unit.
  • The prep sink and 3-compartment sink were observed leaking. Corrective Actions: Plumbing systems and components shall be maintained in good repair.

  • No working thermometers are available for Alto cabinets. Corrective Actions: Facility is instructed to provide an oven thermometer to be placed inside each of the four individual cabinets that are each controlled by a separate thermostat to ensure hot holding capability for each cabinet.

Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.
  • Containers observed stacked while wet; allow to air-dry prior to stacking. Corrective Actions: Store containers in a self-draining position that allows air-drying.

Loosely cover or uncover the food if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food.
  • Observed ice cream scoops stored in container with standing water. Corrective Actions: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F and the container.
  • Observed that the floor drain and sink drain at the 3 compartment sink is slow to drain. Corrective Actions: Repair or clean out drains so that they drain quickly, and do not risk overflowing or backing up onto floors.

  • No hot water at hand sink in the kitchen rest-room. Corrective Actions: Provide a mixing valve or combination faucet capable of providing an adequate flow of water at 85°F or more.
  • No paper towels at hand sinks in the kitchen. Corrective Actions: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials
  • Unlabeled food thickener. Corrective Actions: Label working containers with the common name of its contents. Consumers may be allergic to certain foods or ingredients. The mistaken use of an ingredient when the consumer has requested that it not be used may result in severe medical consequences. Liquid foods and granular foods may resemble cleaning compounds.   • Mouse droppings observed on the floor throughout the kitchen. Fruit fly/roach droppings observed on ceiling and walls. A few roaches on glue boards; clean-up with cleanser & sanitizer, keep up/follow pest control visit findings. Corrective Actions: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
  • Kitchen rest-room hand sink isn't secured to it's adjoining wall. Corrective Actions: Seal the unit to adjoining equipment or walls since it is exposed to spillage or seepage.
  • Steamtable, walk-in refrigerator shelves and condenser fan cover aren't kept clean. Corrective Actions: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Damaged cove base, holes in walls in the storage rooms, dining room and kitchen. Some standing water on floor near dish washing area; floor drain is very slow to drain; voids around pipes and floor tiles need filling. Corrective Actions: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
