Ashburn Health Inspections: Goodfellas Pizza, Dunkin Donuts

The Loudoun County Health Department recorded violations at several restaurants around Ashburn, Dulles, and Sterling during inspections.

ASHBURN, VA — The Loudoun County Health Department recorded violations at several restaurants around Ashburn, Dulles, and Sterling during recent inspections. The most recent visits occurred between July 20 and July 26.

Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection

    • Date inspected: July 21
    • Total violations: 2
      • Both hand washing facilities observed with parts of utensils and containers being placed in them.
      • Yogurt in the top section of lowboy refrigerator registered at 68°F. As per the PIC said unit not holding food at 41°F. Said unit had been in the unit for three hours.

      • Cole slaw in the low boy refrigerator registered at 47°F. Said unit registered at 47°F.

      • The facility does not have verifiable means that the food employees have been trained in the signs and symptoms of food borne illness and how to properly report them.
      • No soap or hand drying provision is provided at the hand washing sink in the kitchen.
      • Oatmeal that was hot holding and served for breakfast was found still available to consumers at improper hot holding temperature (110F).
      • A spray bottle of blue cleaner was observed in a container with no labeling.
      • The facility does not have testing strips to monitor the efficacy or concentration of the sanitizing solution (Quat).

      • Baba ganoush was observed in reach in cooler without date label.
      • The consumer advisory portion of the menu did not possess the correct reminder requirements.

      • The person in charge (PIC) did not know the 6 big foodborne illnesses that are reportable to the department.
      • Hand washing facility in rear food prep area observed without soap and paper towel.
      • Raw animal food holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
      • Raw chicken, chicken wings and sliced cheese registered at 44ºF in the low boy refrigerator in kitchen. As per the PIC said unit was frequently opened that had raised the temperature of said unit to 44º F.
      • Date marking not provided to food items such as marinara sauce and wings on shelf in the walk in refrigeration and the curry tomato sauce in top section of low boy refrigerator. Said food items held for more that 24 hours.
      • No written procedures exist for the use of time only as a public health control for pizzas.
      • Several flies and fruitflies observed in rear food prep and dishwashing area.
      • Several boxes of fries observed placed on floor in the walk in refrigerator in rear kitchen.
  • Pei Wei Asian Diner, 22000 Dulles Retail Plaza #190 Dulles, VA 20166
    • Date inspected: July 25
    • Total violations: 3
      • 2 knives on a magnetic holding strip were found stored with food debris on them.
      • The first cooler on the left as you enter the line is not holding proper cold holding temperatures. Food items within this cooler are above 41F (53-56F). Equipment thermometer is registering 55F.
      • A water bottle was found stored within the ice in the ice machine.

      • Two portions of frozen meat were found thawing at room temperature on the counter.
      • A bag of onions and carrots were found stored directly on the walk-in cooler floor. Several boxed items were found stored directly on the floor of the walk-in freezer.

      • Observed the hand sink in the back used to store a large pot.

      • Several dead fruitflies observed floating in two bottles of whiskey at the bar.
      • Cheese, sliced tomatoes and cut leafy greens registered at 50°F in top section of the low boy refrigerator in front of the grill. As per the PIC said unit was frequently opened during the breakfast rush. Said unit registered at 50°F.

    • Total violations: 2
      • Cut cantaloupe and sliced, cooked ham were found with a date mark of 7/25 and cold holding at improper temperature (45F, 48F)
      • Two scoops observed stored in a container of stagnant water at 130F.
