Ashburn Restaurant Inspections: 14 Restaurants With Violations

The Loudoun County Health Department cited violations at 14 restaurants in Dulles, Sterling, and Ashburn during their recent inspections.

ASHBURN, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Ashburn, Sterling, and Dulles area from Aug. 4 to Aug. 10, including several locations with violations.

As coronavirus restrictions continue to fluctuate, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

  • Auntie Anne’s Pretzels, 21100 Dulles Town Circle #262 Dulles, VA 20166
    • Date inspected: Aug. 4
    • Total violations: 2
      • When asked, the Person in Charge was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy.
      • The paper towels serving the front hand sink are roll paper towels that are not in a dispenser.
  • Four Sisters Snack Bar, 43670 Greenway Corporate Dr # 106 Ashburn, VA 20147
    • Date inspected: Aug. 4
    • Total violations: 1
      • Improper cooling observed in that two containers of grilled pork in the bottom shelf of low boy refrigerator in food prep area registered at 44°F to 46°F. Said food had been in said location for more than 12 hours.
  • Starbucks Coffee #13930, 21100 Dulles Town Circle Sterling, VA 20166
    • Date inspected: Aug. 4
    • Total violations: 2
      • When asked, the Person in Charge was not able to provide verifiable documentation that all on-duty staff have been trained on employee health policy.
      • The solution in the wiping cloth bucket was measured at 500 ppm quat.
  • Chick-Fil-A / Peet's Coffee, 1 Saarinen Circle Terminal B Sterling, VA 20166
    • Date inspected: Aug. 5
    • Total violations: 3
      • The Person in charge (pic) was not able to produce a verifiable employee health training agreement.
      • The hand sink near the veg prep sink is out of hand soap.
      • Observed a cardboard box of lettuce sitting directly on top of a cutting board used to cut chicken and other salad prep.
  • Dulles Kabob, 23520 Overland Dr #132 Dulles, VA 20166
    • Date inspected: Aug. 5
    • Total violations: 6
      • Handwashing facility in kitchen observed blocked with dirty dishes placed in it.
      • Temperature control for safety (TCS) food items such as chick peas, spinach and beef gravy registered between 130°Fto 123°F in the hot holding unit in front food service area. Said food were placed directly on hot holding unit from walk in refrigerator without adequate reheating.
      • Cooked spinach registered at 56°F in walk in refrigerator.
      • Taziki (yogurt sauce) registered at 55°F in the low boy refrigeration unit. Said unit observed operating at 50°F
      • Several food items such as chick peas,Taziki and spinach in refrigeration units being held for more than 24 hours observed without date marking.
      • Correct test strips not provided in the facility.
  • Oriental Express, 45665 Church Road West Sterling, VA 20164
    • Date inspected: Aug. 5
    • Total violations: 3
      • Employee again unable to make sanitizer with correct/acceptable ppm chlorine.
      • Food uncovered in coolers allowing for possible cross contamination.
      • Employee was not sanitizing equipment/utensils properly.
  • Jersey Mike’s Subs, 21031 Triple Seven Rd #160 Sterling, VA 20165
    • Date inspected: Aug. 5
    • Total violations: 1
      • The walk in cooler is not in a state of repair or adjustment to maintain temperatures of 41°F or below - the built-in digital thermometer was observed at 45.8°F and an air temperature reading of 46°F was taken.
  • Bungalow Lake House, 46116 Lake Center Plaza Sterling, VA 20165
    • Date inspected: Aug. 5
    • Total violations: 9
      • Several coffee cups utilized by staff were observed throughout the kitchen stored on prep tables.
      • A server was observed improperly washing their hands in the dump sink at the Lake Bar without utilizing hand soap.
      • The hand sink at the Lake Bar was observed with no hand soap.
      • No handwashing signage at the employee bathroom sink in the kitchen and hand sink at the lake bar was observed.
      • The ice machine in the kitchen was observed with moderate soil residue on the bin housing the ice.
      • Several food items within the reach-in cooler at the pizza station were temped at improper temperatures.
      • Several food items were observed stored for use with a date marking that exceeded the 7-day maximum.
      • Several stored TCS food items were found without proper date markings.
      • Employee jackets/purses were observed stored in the prep area of the kitchen.
  • Chicago’s Pizza With A Twist & Sports Bar, 20691 Ashburn Rd STE 155/160 Ashburn, VA 20147
    • Date inspected: Aug. 6
    • Total violations: 5
      • Employees are not trained to report signs, symptoms, and exposures to foodborne illness and who to report to.
      • Observed the following foods out of temp: Mozzarella Cheese 62F, 45F, Tandori Chicken 44F, Marinara Sauce 45F.
      • Observed the follow foods not date marked: From 3 DR PT- Open can of Artichoke hearts, Open can of sliced Pineapples.
      • 3 DR Prep Top had an ambient temperature of 58F at beginning of inspection.
      • Site did not have proper quat test strips to confirm concentration.
  • Independence High School(Outdoor Concession), 23115 Learning Circle Ashburn, VA 20148

      • The hand sink hot water is measuring at 85F.

      • Pickled onions with a date mark of 7/15/2021 were in the reach in cooler.

      • Observed plumbing under 3 compartment sink leaking.

    • Total violations: 13
      • Employees are not trained on the signs, symptoms, and exposures of foodborne illness and who to report to.
      • Hand sink by ice machine had no paper towels.
      • Observed no employee handwashing signs in restroom.
      • Clams were in walk in cooler without shellstock tags.
      • There's no record keeping of shellstock.
      • Observed raw shell eggs next to orange juice. Raw beef next to fresh limes. In walk in cooler food item were not covered to protect form environment contamination.
      • Cutting boards were not clean to sight and touch due scaring of knives cutting the cutting boards.
      • In hot holding unit shredded chicken 131F, 140F, ground beef 129F, Shredded beef 120F.
      • Cheese 49F and cut tomatoes 46F improper cold holding temperature.
      • Prepped lettuce place in prep cooler to cool.
      • Observed the walk in cooler not allowing a person to exit without assistant from the kitchen side of the walk in cooler.
      • There was no quat testing strips.
      • Employee restroom door near ice machine is not self closing.
  • Dulles Cafe Express, 4430 Mercure Circle #115 Sterling, VA 20166
    • Date inspected: Aug. 10
    • Total violations: 4
      • The person in charge (PIC) was not able to produce a verifiable employee health policy.
      • The commercially processed ready-to-eat (RTE) ham, deli meat, and sausage in the refrigeration unit was not date marked after opening with a date or time that exceeds the maximum holding time as allowed by law.
      • Facility does not have Quat sanitizer test strips to test the sanitizer at the three compartment sink.
      • Non-food contact areas in the kitchen noted in need of cleaning. Observed encrusted food debris and grime on the side of the prep cooler, inside the storage cooler and wall behind left side of the kitchen.
