Ashburn Restaurant Inspections: Dead Roach, Mice Droppings

The Loudoun County Health Department found violations at numerous restaurants around the Ashburn area, including mice droppings on shelves.

ASHBURN, VA — Numerous restaurants in the Ashburn area recorded violations during health department inspections between Feb. 22 and March 5.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

Hand washing sinks shall be used for no other purpose than washing hands and shall be free of any obstacles so that frequent hand washing is encouraged. Person in charge (PIC) removed the bucket.
  • A container of raw chicken was found stored over ready to eat (RTE) foods in the reach in cooler on the line, raw chicken, pork, shrimp found stored over cooked RTE lomein in the walk-in cooler. Foods shall be protected from cross contamination by separating raw animal proteins from RTE foods. PIC had employee rearrange raw chicken so that it was stored on the bottom shelves, raw pork/shrimp above the raw chicken, and the lomein noodles at the top.
  • EHS observed 2 boxes of opened tofu stored directly on the floor of the walk-in cooler. Foods must be protected from sources of contamination by keeping them covered and storing them at least 6" off the floor.
  • EHS observed cooked, RTE chicken wings stored within a cardboard box in the reach-in cooler on the line. Food contact surfaces must be smooth, durable and easily cleanable. PIC removed the wings from the card board box and transferred them into a clean plastic container during the inspection.

  • Date marking not provided to several food items such as coconut fried rice, cooked chicken wings and pork bellies in the low boy refrigerator. As per the PIC said food items were cooked and placed in said unit 1 to 2 days prior.
  • Observed prepared ready-to-eat, potentially hazardous food such s larb (sauce with lamb) being held for more than seven days.
  • One can of insecticide and one container of medicine observed being stored with cooking oil spray in a shelf in the kitchen.
  • One dead roach observed on top of the dishwasher in the kitchen.
  • Food stored on the floor or food stored less than 6" above the floor in that several boxes of vegetables observed stored on floor in kitchen and several containers of food observed stored on floor in the walk in freezer.
  • The cutting board along the prep table in the kitchen are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.

  • Observed several small metal containers wet-stacked after washing. Food contact equipment shall be properly air dried after washing. Properly dry before stacking.

  • Date marking not provided to black beans in the walk in refrigerator. As per the PIC said food was prepared a day prior and will be held for 3 days.

  • EHS observed a paper coffee cup with coffee inside stored in the prep area during active prepping. Employees may drink while in the kitchen if the container is closed and does not pose a potential contamination risk. Employee discarded the coffee.
  • No hand soap is available at the hand sink located in the prep area/3 basin sink (back. Of kitchen) Hand sinks utilized by food employees must have hand washing cleanser available at all times.
  • EHS observed raw chicken stored in the walk-in cooler over ready to eat (RTE) lomien noodles and raw pork. Food shall be protected from cross contamination by separating RTE foods from raw proteins, and separating and arranging raw animal proteins in order of lowest internal cook temperature to highest. Chicken was moved to the bottom shelves.
  • EHS observed roast pork ribs with no date marking in the walk-in cooler. When asked, Person in charge stated that the ribs were made the day before.
  • EHS observed several RTE foods in the cooling process that were covered. When cooling foods, they should remain uncovered so that the maximum amount of heat transfer can be achieved, and the fastest cooling of the product can be reached.
  • EHS observed raw chicken in standing water at the three basin sink. When thawing foods, they must be thawed under refrigeration of 41F or less, or in cold (70For less) continuously running water.
  • EHS observed food stored directly on the floor of the walk-in freezer. Food shall be stored at least 6' off the floor at all times.

  • Two containers of bacon were found improperly cold holding in a prep cooler with an internal temperature of 48F for approximately 2 hours. Raw bacon is required to cold hold at 41F or below to prevent the growth of harmful bacteria. Person in charge corrected by relocating foods to the walkin cooler.
  • A container of corn relish and fontina cheese were date labeled 2/11/2024. Dispose of prepared foods beyond 7 days from the date of preparation. Person in charge corrected by voluntarily discarding.
  • Burgers and steaks offered undercooked to the consumer require a consumer reminder that links with the menu's consumer advisory statement to inform the consumer of the risk of consuming such foods.
  • A large container of pasta (greater than 4") was observed improperly cooling with a tight lid for approximately three hours with an internal temperature of 64F inside the walkin cooler. Pasta should be cooled uncovered in a shallow container or using an ice bath method or other approved methods to reach 41F within the proper time frame to prevent the growth of harmful bacteria. Person in charge corrected by splitting into two containers and removing the lid.
  • Observed unused non-working refrigeration equipment and a warmer unit inside the kitchen. Equipment is required to be maintained in a state of repair and condition that meets the requirements of the code.
  • No light shields provided for lights situated above the ice machine. Provide shields within 90 days.

Gumagumalu Kitchen: 506 Shaw Road #331 Sterling, VA 20166

  • Observed that hand soap was not provided at each handwashing sink.
  • Raw animal food stored over vegetables in the refrigeration unit in that trays of raw shrimp observed placed on top of cut paneer on the shelf in walk in refrigerator in kitchen.
  • Sheet pan rack with some pans and utensils in food prep area next to the stoves in kitchen observed with several mice droppings.
  • Date marking not provided to prepared temperature control for safety (TCS) food such as cooked jackfruit biryani, cooked vegetables, chicken and goat curries in two door reach in refrigerator in the kitchen. As per the PIC said food were prepared a day prior and being held in the refrigeration units.
  • Several mice droppings observed on floor and on shelves in the kitchen. Provide pest control treatment to eliminate pest from the facility and clean and sanitize the equipment.
  • Food stored on the floor or food stored less than 6" above the floor in kitchen and in the walk in refrigerator.
  • Several unused old equipment observed dirty with debris, dust and mice droppings in and on them.
