Ashburn Restaurant Inspections: Eateries With Up To 9 Violations

The Loudoun County Health Department found violations at numerous restaurants around the Ashburn area, including one place with nine.

ASHBURN, VA — Numerous restaurants in the Ashburn area recorded violations during health department inspections between Feb. 7 and 21.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

  • Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissible through food.
  • The establishment could not demonstrate the ability to provide written procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment.
  • Raw animal food is stored over ready-to-eat food in the refrigeration unit. Raw shelled eggs were observed stored directly over tuna salad, chicken salad, and coleslaw in walk-in cooler.
  • Observed cut lettuce, at 50°F, multiple portioned sliced turkey at 44°F, tuna salad at 45°F cold holding at improper temperatures. The person in charge explained that the refrigeration unit was opened frequently during the lunch period.
  • Pizza for which time rather than temperature is being used as a control is not properly labeled. Observed sausage pizza and pepperoni pizza held using time as public health control with marking.
  • First Aid Supplies are not being stored in a kit or container. Hydrogen Peroxide and other first aid supplies along with personal care items were observed storing directly over a hot holding table.
  • Food thermometer not provided.
  • Wet wiping cloths were observed stored on prep tables and prep cooler between use.
  • The sandwich prep cooler located in the front service area was observed in a state of disrepair. The unit was not maintaining proper cold holding temperature.

Asian Spice Cafe: 42395 Ryan Rd #126 Ashburn, VA 20148

Violations:

  • Observed no drying provision at the sink by the dish washer area. Each handwashing sink shall be provided with individual, disposable towel.
  • The Person in Charge was not able to locate the parasite destruction documentation for the sushi fish such as salmon and white tuna.
  • Observed slicer with accumulation of debris. Equipment food-contact surfaces and utensils shall be clean to sight and touch. PIC moved slicer to the dish washing area to be washed, rinsed and sanitized.
  • Observed all items that consist of or contain raw or undercooked animal food are disclosed on the menu. None of disclosures that are present on the menu are linked to the reminder footnote.
  • Observed bag of onions and bag of rice on the floor. PIC relocated bag of onions and bag of rice to shelf above 6 inches off the floor.
  • Observed plastic bowls in bulk container (rice, flour). PIC will provide utensils with handles.

  • Handwashing station observed being used for other purposes than to wash hands in that the handwashing station at the main kitchen observed being used to wash noodles by the food employee during inspection and with used dirty spoon placed in it.
  • Ready to eat TCS foods held over 24 hours must be date marked with either made on date or date the food item must be consumed not to exceed 7 days in that cooked chicken wings in walk in refrigerator observed not dated for disposition.
  • Several unused equipment observed being kept in the rear food storage area of the kitchen.

  • Observed cut cabbage and rice noodle cold holding at improper temperature (65F).

  • The methods used for cooling were not adequate. There is no person in charge of monitoring the cooling temperature and making sure the food is cooling down properly.
  • Inside of the ice machine observed with black residues.
