Ashburn Restaurant Inspections: Violations At 11 Locations
The Loudoun County Health Department found several violations during recent restaurant inspections in Sterling, Dulles, and Ashburn.
ASHBURN, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Ashburn area from July 14 to July 21, including several locations with violations.
As coronavirus restrictions continue to loosen around the state, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

- The person in charge (PIC) was unable to demonstrate that staff are monitoring food temps- cold holding and cooling. Food times were not date labeled.
- Employees were observed handling raw beef & chicken then handling food containers- (to go) without washing hands.
- Raw chicken was observed stored over raw beef. Several containers of food were observed stored uncovered /unprotected. PIC had chicken placed below the beef.
- Slicer was not clean to sight & touch. There was food crumbles on slicer.
- Several food items, cooked beef, curry sauce, raw beef and raw chicken, were observed cold holding above 41°F.
- Curry sauce was observed cold holding without and date marking. Manager stated the sauce was made two days ago.
- White rice was observed cooling in walk-in cooler to be made into fried rice with a covered and in a large container . General Tao chicken observed without being monitored
- Back door observed open and flies found in the kitchen.

- When asked, Starbucks staff could not describe how to verify that their dish machine is sanitizing.
- Mild wings at 46°F, 47°F and 45°F cold holding at improper temperatures.
- Walls in the vicinity of the mop sink and the floor/floor mats behind the Starbucks were noted in need of cleaning.

- Items cycled through the 3 compartment sink are not being sanitized - the quat sanitizer is labeled for use at 200-400 ppm and the solution in the sink is testing at 100-150 ppm.
