Gluten Free Lil Me

Now that its 2013 I am hoping everyone knows what a Gluten Free diet is. The name pretty much sums it up, a diet free of Gluten. What is Gluten? So glad you asked, its a protein found in wheat, oaks, barley and Rye. When you are allergic to  Gluten you MUST avoid all of those grains. No, potatoes are not gluten. Don't know why everyone thinks that though.
When you are allergic to gluten you don't have the typical symptoms that are assosiated with food allergies like swollen throat or rash symptoms. When you are allergic to gluten everything happens from the inside out. Sometimes it takes doctors YEARS to understand why someone is sick if they are allergic and unaware. I was a sick child. I had asthma, migraines, acne, bloating and a whole list of attention and depression issues. Until I was in my 20's and was super sick for 3 months straight did a Gastroenterologist figure out what was wrong. He did a colonoscopy and found out I was allergic to gluten. When I was diagnosed he just handed be a two sided piece of paper and said don't eat gluten. I was like what the hell is gluten? For another year I was still eating it not knowing. It wasn't until I found Living Gluten Free for Dummies did I realize how serious being GF is.
Now I have made it my mission to help people with Celiac Diseasehttp://www.celiac.org/index.php?option=com_content&id=3&Itemid=9 and those that have no clue what is, live a healthy life.
See when I found out about having to live GF there were litterlly no GF products! I mean the cookies tasted like card board, worse sometimes, actually.
We GF people have saviors now like WEGMANS woot woot, and pilsbury just came out with a few GF items as well. Life as a GFreer is much better. I can go into a resturant and ask for a gluten free menu and most places offer one. NOT all but some.
My goal though is to create a Gluten Free world, world, world (echos)
I believe that anything that is DAS Gluten, can be Gluten Free!
No more cardboard cookies, no more dry frozen cakes. No more nasty bland frozen pizza dough.
