Banoffee Pie: Greenspring's Executive Chef Shares a Recipe for National Pie Day

INGREDIENTS

Graham cracker crust 
  • graham cracker crumbs (1.5 cups)
  • melted butter (3 oz.)
Toffee
  • sweet condensed milk (1 can)

Bananas (2)
Whipped cream (as needed)
Chocolate sauce (as needed)

To make the graham cracker crust:
1. Combine melted butter and graham cracker crumbs.
2. Mix until all butter is absorbed.

To make the toffee:
1. Place can of sweet condensed milk in a large stock pot.
2. Cover with water 5 inches above can.  Boil constantly for 4 hours.  
3. Check frequently to make sure that the water level has not gone beneath the top of the can.

4. Remove can and let cool.
To make the pie:
1. Fill graham cracker crust with toffee.
2. Cover with plastic and place in freezer.
2. Slice bananas a ¼” thick layer over the toffee.  Pipe flowers of whipped cream on top. 
2. Slice pie into 8 pieces.
