Awesome Recipe I May 8, 2012

                                   THAI CURRY-CHICKEN AND RICE

Prep Time:  15 min.

Total Time:  35 min.

1 Tbsp. canola oil

2 Tbsp. green curry paste

1 lb. chicken breasts cut into bite-sized pieces (boneless/skinless)

1 small onion sliced thin

1 red and 1 green pepper, cut into strips, then half

1/4 cup milk

4 oz. cream cheese

1/8 tea white pepper

2 cooks hot cooked long grain white rice

 

Heat oil in pan on medium heat and stir in curry paste until well blended, add chicken and onions and stir about 6 min. then add peppers and cook 5 min. till crisp-tender.

Add cream cheese, milk and white pepper, cook till melted and coated over chicken.

Serve over rice.
