Fredericksburg Restaurant Inspections: Chipotle, The Pig Pitt

The Rappahannock Area Health District recorded violations at several facilities around Fredericksburg during recent restaurant inspections.

FREDERICKSBURG, VA — Several facilities in the Fredericksburg area recorded violations during recent inspections from the Rappahannock Area Health District. Inspectors conducted the most recent visits between Nov. 22 and Nov. 28.

In Virginia, all food service locations are supposed to be inspected at least once per year. Facilities with higher risk factors may be inspected as often as four times per year, according to the Virginia Department of Health.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected. Sometimes, the follow-up inspection only considers the most important "priority" violations.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

Depending on the results of the inspection, the health department can pursue several actions.

It can issue a permit for the restaurant to continue serving food, they can schedule a follow-up inspection to determine if violations have been rectified, or officials can temporarily shut down an establishment until certain issues are solved.

The Virginia Department of Health only recommends restaurants have their permits suspended when "the continued operation of the foodservice presents a substantial and imminent threat to the public health."

Here are the most recent violations as listed by the Rappahannock Area Health Department:

  • Hunan Garden, 923 Caroline Street Fredericksburg, VA 22401
    • Date inspected: Nov. 27
    • Total violations: 4
      • Observed the following cold holding in the prep cooler out of temperature: 1. noodles at 49 degrees F; 2. cooked shredded chicken at 45 degrees F; and 3. raw chicken at 43 degrees F. 4. bean sprouts at 46 degrees F. Person in charge advised all items had been in the unit since 11:30am, it was 4:30pm, so they were voluntarily discarded. Person in charge lowered temperature and if it doesn't hold they will call for repair, and put items on ice in the unit to maintain proper temperature.
      • Person in charge was unable to provide a thin probe thermometer.
      • The exterior door in the kitchen and by the stairs for the basement have a large gap between the door jamb and the door itself.
      • Person in charge was unable to provide a quaternary ammonium sanitizer test kit.
  • The Club at Jubilation, 1301 Ashford Circle Fredericksburg, VA 22401
    • Date inspected: Nov. 27
    • Total violations: 4
      • Observed the interior of the kitchen oven and the two turbo chef ovens in the front service areas heavily soiled.
      • Observed 2 of the three self service cereal offered to the customers do not bear a label.
      • Observed several stored utensils (spatulas) with the handles melted/damaged and the scraper attachment of the kitchen aid mixer is chipping with what appears to be white paint.
      • Observed employees personal belongings (keys, coats, beverages, cell phones) stored on a shelf above kitchen items (utensils and glasses).
  • Subway/Auntie Anne's Pretzel (Inside Wal-Mart), 11 Village Parkway Fredericksburg, VA 22406
    • Date inspected: Nov. 28
    • Total violations: 2
      • Facility does not have at least one valid certified food protection manager certification.
      • Observed small containers of cream cheese placed in a medium sized plastic container stored in a reach in cooler held at improper temperatures (49-50 degrees F) at 1:40 pm. The temperature of the unit read 49 degrees F. The containers of cream cheese were put in unit at 10:00am. The cream cheese will be discarded at 2:00pm, after 4 hours are reached. The temperature of unit was lowered.
  • Dairy Queen Grill & Chill, 8016 Spotsylvania Mall Fredericksburg, VA 22407
    • Date inspected: Nov. 28
    • Total violations: 4
      • Person in charge was unable to provide written procedures for clean-up of vomiting and diarrheal events. A copy was provided to the person in charge.
      • Observed the interior of the ice machine soiled.
      • Observed a wiping cloth and bucket inside of the reach-in freezer next to the ice cream machine. The unit was still maintaining proper temperature. The person in charge advised it was to keep the water from ice build-up from accumulating in the unit. Person in charge will call for the unit to be serviced.
      • Observed the gaskets of the reach-in coolers, freezers, and ice cream machines soiled.
  • El Patron Mexican Restaurant, 9112 Old Battlefield Blvd 112 Spotsylvania Courthouse, VA 22553
    • Date inspected: Nov. 28
    • Total violations: 1
      • Facility could not provide testing kit for Sink & Surface sanitizer.
  • The Pig Pitt, 1017 Sophia Street Fredericksburg, VA 22401
    • Date inspected: Nov. 28
    • Total violations: 5
      • Observed the interior of the microwave needs cleaning.
      • Observed cutting boards, including the prep table cutting table, of the facility heavily scratched and scored. Discussed resurfacing or replacing cutting boards.
      • Observed the following non food contact surfaces in need of cleaning: 1. fryer cabinets 2. sides of cook equipment on hot line 3. top part of the sandwich prep cooler.
      • The following facilities are in need of repair: 1. floor grouting in walk in cooler 2. reseal/repaint floor of the main kitchen 3. coving loose/missing behind the ice machine.
      • The following facilities were observed in need of cleaning: 1. floors underneath equipment in the kitchen 2. walls behind shelving in the walk in cooler 3. clean or paint ceiling of the walk in cooler 4. fan vents of the walk in cooler 5. floor drains throughout 6. walls behind and around equipment in the cook/hot hold area.
  • McDonald's (Stanstead) #5123, 44 Stanstead Road Fredericksburg, VA 22405
    • Date inspected: Nov. 28
    • Total violations: 5
      • Observed plastic food containers stacked while wet after chemical sanitizing on wire shelving.
      • Observed the following nonfood contact surfaces requiring cleaning: Shelving by the hot holding station, upsplash of the drive thru soda machine nozzles and juice machines and white residue on the underside of plastic storage bins on warewashing shelving.
      • Observed a long hose sitting in the basin of the mop sink, in absence of backflow preventer, inside a closet in the dining room area which was connected to a Y-connector. During the inspection the hose was wrapped around the faucet. Discussed cutting the hose at least 1 inch above the flood rim of the sink.
      • Observed the recycling receptacle stored on the grass in the dumpster area.
      • Observed unused equipment in the hallway between the warewashing area and walk in freezer. Discussed removing unused equipment from the premises.
  • Chipotle Mexican Grill, 100 Prosperity Lane Ste. B Stafford, VA 22556
    • Date inspected: Nov. 28
    • Total violations: 12
      • Observed stacked boxes of raw chicken touching opened box of lettuce in the walk in cooler. During the inspection instructed the operator to relocate the box of lettuce to prevent contamination.
      • Observed the in-use low temperature dishwasher is not adequately sanitizing food contact equipment after 2 cycles. Observed Chlorine sanitization at 10 ppm at 138 degrees F. Instructed the operator the dishwasher may be used to wash food contact equipment, but sanitizing will need to take place in the 3-compartment sink. Instructed the operator to contact technician for service.
      • Through discussion with the person in charge the food thermometer is being sanitized only, absence of wash step. Informed the operator food thermometers are required to be washed and sanitized at least every 4 hours when in use.
      • Observed steak hot holding at 129 degrees F in the front hot holding unit. The person in charge reported it was placed in the unit at 2:16 p.m and was removed to reheat above 165 degrees F on the flattop grill. Temperature was observed at 191 degrees F within 30 minutes.
      • Food establishment is using time as a public health control for reheated steak (4 hours) without prior approval or notice to the health department. Provided time as a public health control documentation to the operator.
      • Observed the in-use Quaternary Ammonium sanitizer in the 3-vat sink, which was in the process of being filled by a food employee, exceeding 400 ppm. Demonstrated dilution with water to achieve a concentration between 200 and 400 ppm. Sanitizer was observed at 300 ppm after dilution. Instructed the operator to contact a technician to service the dispenser.
      • Observed stainless steel containers nested and stacked while wet after chemical sanitizing on wire shelving.
      • Observed stainless steel walls at the mop sink and stainless steel backsplash at the mobile order hot/cold wells are not sealed to the adjacent walls.
      • Observed multiple green cutting boards scratched and scored, equipment is no longer smooth and easily cleanable.
      • Observed low water pressure at the 3 compartment sink. All other sinks in the facility had adequate pressure. Contact plumber to evaluate.
      • Observed accumulation of trash and boxes on the ground in the dumpster enclosure.
      • Observed the caulk at the 3 vat sink and floors under equipment in need of cleaning. Also observed food debris in the floor sink under the 3 vat sink which was causing water to back up. During the inspection food debris was removed and adequate drainage was observed.
