This week’s recipe is fast and easy.  You won’t miss the full fat mayo with Old Bay as the seasoning.  It’s even better the next day when the flavors have meddled.  Serve it over greens or a bed of spinach.  You can bump up the nutrition by using whole-grain pasta.

Chesapeake Tuna Pasta Salad

It’s recommended that children and pregnant women eat only chunk light tuna due to increased mercury found in albacore.  You can substitute one can of albacore in water or olive oil for the chunk light tuna, if desired.

8 ounces, uncooked medium shell pasta or elbows

1/3 cup celery, chopped

1/3 cup, green or red pepper, chopped

¼ cup, Vidalia or red onion, chopped

2 cans chunk light tuna, flaked

1 cup reduced-fat mayonnaise

1 teaspoon Old Bay seasoning

Cook the pasta according to the package directions.  Drain the pasta and place in a large bowl.  Add the celery, pepper, onion  and tuna to the pasta and mix to combine.   Add the mayonnaise and  Old Bay, mix until all the ingredients are well coated.  Chill before serving.  Serves 4-6.
