Leesburg Health Inspections: Rodent Droppings At Elementary School
The Loudoun County Health Department recorded violations at several facilities around Leesburg during recent inspections.
LEESBURG, VA — The Loudoun County Health Department recorded violations at several Leesburg area restaurants during inspections from Oct. 5 to Oct. 11.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Observed hand sink blocked with a cloth and a plastic container.
- Observed milk with an expired on 10/2.

- The bar dish machine sanitizer concentration was checked by Cheff and test strip shows no sanitizer on the food contact surface.
- Cooked beef short ribs were observed cold holding in the prep cooler online with an internal temperature of 44 F. Cold holding needs to be 41 F or less.
- Thawed raw fish was observe vacuum packed while stored in grill cooler.

- Raw ground beef burger portions stored over boxes of whole muscle meat proteins (pork and beef) in the walk in cooler.
- The dumpster for this facility is not enclosed or lidded. The dumpster is sitting on gravel in the back of the parking lot.

- Observed rodent droppings throughout dry storage room. Droppings were observed on top of canned goods, boxes of food and boxes of food contact items stored on shelving. A wooden mouse trap was observed stored on shelf next to plastic ramakin containers and above plastic beverage cups.

- Observed 2 containers of cooked chicken wings, 3 containers of cooked pasta and pizza sauce prepared in the establishment not dated for disposition.
- Observed 2 containers of Raid pest killer spray in the kitchen.
- Observed several flies throughout the facility. Upon EHS arrival, back door and front door were open.
- Observed back door propped open with no means to control pests. Several flies were found in the facility. Facility has screen to cover door but screen was not in use.

- Observed no verifiable manner that current employees are aware of their responsibility to report to the person in charge information about their health and activities as it relates to diseases that are transmissible through food.

- Cooling procedures for cooked chicken wings are not followed. Wings are cooked and placed directly in reach in cooler. Reach in cooler ambient air reads 92F. No one observed taking internal temperatures of wings nor monitoring to ensure time/temperature requirements are met for safety. Chicken wings began cooking at 11:00am and were at the following temperatures at 2:00pm: 71F, 83F, 88F, 93F.
- The following prepared foods stored in walk in cooler exceeded consume by date: roasted garlic, fiery garlic sauce, suicide ranch sauce, sweet firecracker sauce, Peruvian verde sauce, spicy honey mustard. Expired food preparation date labels span from 9/5/22 to 9/29/22.
- Improper cooling methods used to cool fully cooked chicken wings. Ten batches of cooked chicken wings, directly from the fryer, placed on shallow metal pans are stored in single door reach in cooler (RIC) to cool down. The ten batches of wings are cooked in approximately 1 1/2 hours, 8 minutes per batch then placed in RIC. Ambient air of reach in cooler at 12:30 92F, and 67F at 2:00pm.

- Observed a build up of a pink substance on plastic guard in the ice machine.
