LEESBURG, VA — The Loudoun County Health Department recorded violations at several restaurants around Leesburg during recent inspections. The most recently published inspections occurred between July 20 and July 26.
Most COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

- The hand sink was observed being used to rinse blender pitchers out between use. Hand sinks are for hand washing only.
- The internal temperature of cheese sauce was observed below 135 F while hot holding on the seam table.
- Grilled chicken was observed stored in the top part of sandwich prep cooler cooling with an internal temperature of 90 F.
- A wet wiping cloth was observed stored on the prep board at the mix station.

- Staff is was not properly trained to monitor the internal temperatures prepared foods while hot and cold holding. Kitchen staff did not have a food thermometer to monitor food temperatures.
- Chicken salad and tuna salad was observed cold holding in the reach-in cooler at 47 F. The salads had been stored in the cooler since Wednesday.
- In house made chicken and tuna salad were observed stored in cooler without any date marking with the date made or discard date.
- Kitchen staff could not provide a food thermometer to check the internal food temperatures while the food is held hot and cold in this kitchen.
- A single service plastic cup was observed stored in the ice bin and was used to scoop ice for drinks.
- Mop was observed stored wet in the mop bucket and a dry mop was observed stored out back of the building on the concrete pad.

Observed potato leek soup (48F), vegetable soup (52F), and potato soup (45F) cold holding at improper temperatures.
- Observed time as a public health control being used for milk not marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food was removed from temperature control.
- Observed several food items prepackaged in a grab & go manner with no label on the packaging. Items included rice pudding, brownies, lemon bars, pecan bars, German bars, eclairs, banana bread, zucchini bread, and cookies. Other items prepackaged in a grab and go manner have a label but are missing net weight.

- The food establishment serves or sells raw or undercooked food and the permit holder does not inform consumers of the significantly increased risk consuming such foods by way of an asterisk on each food item to reference the footnote that states the items are served raw or undercooked, or contain raw or undercooked ingredients.
- Observed one side of hood vent above the flat top grill to be missing its baffles. Also observed 2 door freezer unable to maintain foods frozen. Foods are within cold-holding range.
