Leesburg Restaurant Inspections: 13 Restaurants With Violations
The Loudoun County Health Department cited violations at 13 different restaurants during their most recent round of inspections in Leesburg.
LEESBURG, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Leesburg area from Aug. 18 to Aug. 25, including 13 different locations with violations.
As coronavirus restrictions continue to fluctuate around the state, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Date inspected: Aug. 18
- Total violations: 7
- The person in the kitchen was not familiar with the proper washing, rinsing, and sanitizing food equipment / utensils.
- There was not hand soap at the hand washing sink.
- Observed hand soap dispenser located at the 3 vat sink.
- There was not hand towels at hand washing sink.
- A open package of hot dogs was observed in the cooler without and date marking.
- The door gasket on the ice machine was observed peeling off.
- The condensation line from the air conditioning system drains directly into the middle sink of 3 vat sink.

- Employees are not aware of or are not monitoring the cold holding temperatures of time/temperature control for safety (TCS) foods.
- Bread warming pans were observed with old bread crumbs in it. The unit has not been used today.
- This food establishment is using a noncontinuous cooking process and has not submitted written procedures to or obtained approval from the health department.
- Cut tomato, hummus, and cut greens were observed stored with an internal temperatures above 41°F in the prep cooler.
- A number of food items were observed stored without date marking. A container of marinara was observed with two (2) different dates.
- Personal item, bag with items in it, was observed stored in cooler at wait station.
- Top of shelving over production line was observed with residue and dust.
- Observed a spray hose attached to a faucet that extended below the flood rim level of the 3 vat sink.

- Employees are not properly trained in food safety and facility is not being maintained in a sanitary manner.
- Bottles of water, one full and one half empty, with a screw cap were observed sitting on shelving next to clean food utensils at dish ware area.
- A broken, raw shell egg was observed sitting egg flat on shelving over the storage of half and half in the walk in cooler.
- A black residue was observed on the interior walls of the ice machines.
- Old, dried food debris was observed on tongs that were observed on the handle of the several ovens that have not been used today.
- A high temperature recording thermometer was ran through the hot water sanitizing dish machine and the final utensil temperature was observed at 149°F.
- There were a number of food items that were no date labeled to indicate date made or discard date.
- Containers of food were observed stored in a puddle of water while stored in bottom of prep cooler.
- Clean knives were observed stored between the brick wall and the stainless steel table by the dish machine.
- Many food utensils were observed stored wet stacked on the clean dish rack.
- An irreversible registering temperature indicator was not provided for the hot water mechanical warewashing operation.
- The frame of the slicer were observed with old food residue on it.
- The floor sink at coffee station is slow to drain.
- Ventilation is not sufficient to keep rooms free of excessive vapors from grill. Ventilation is not sufficient to keep dish ware area free of condensation. Condensation was observed dripping from ceiling in dish machine room.

- Facility receives and serves live mussels (shellstock). Person in charge (pic) was not aware of mandatory shellstock tag maintenance requirements. Tags are not date marked after the last shell stock is served/sold and the tags are only kept for 30 days.
- Compound butters (one with garlic) made with unsalted whole butter are held on the counter (out of temperature control) under time control. Facility does not have written procedures in place for using time as a public health control nor are said TCS foods time stamped.

- There was no chlorine testing strips to test dishwasher.
- Observed unsalted butter at a temperature of 44, 45, 47.
- Sausage gravy was in reach in cooler in container with lid on temperature of 105 cooled at 8;45 am inspection began at 11 AM.
- Observed raw shelled eggs over ready to eat food in the top half of the reach in cooler.

- Onions stored on the floor in the walk-in cooler.

- Observed raw shell eggs stored in walk-in cooler unit next to chopped Romaine Lettuce.
