Leesburg Restaurant Inspections: Dead Roaches In Dish Machine
The Loudoun County Health Department cited violations at 11 restaurants around Leesburg, Purcellville, and Middleburg.
LEESBURG, VA — In the most recent restaurant inspections in western Loudoun County, 11 different locations were cited with violations. The inspections were conducted between Nov. 3 and Nov. 9.
As coronavirus restrictions continue to fluctuate around the state, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Observed several shellstock tags not dated with when the last shellstock from the container was sold or served. Also observed tags not in chronological order.
- Observed bar dish machine with 0 PPM sanitizer. Dish machine was actively being used.
- Observed ice machine in need of cleaning.
- There is no data plate on the warewashing machine.
- Observed exterior door near private serving area not tight fitting. Significant daylight observed from bottom of door.

- Observed: Test strips for checking strength of quaternary ammonia were not available.
- No written procedures exist for the use of time only as a public health control for 1/2 and 1/2 on customer counter.
- According to the date marking system used on the prepared ready-to-eat (RTE) sliced roast beef in the refrigerator, the food should have been discarded. (Dates: 10/19 and 10/23)
- Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food. There is no available verifiable employee health policy available for the person-in-charge.

- Observed: There are no signs informing employees to wash hands at the bar hand sink and in the women's restroom

- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- 1. Water from the handwashing sink in the kitchen was measured at a temperature less than 100°F. 2. Signage informing employees to wash hands not available at employee handsink in the kitchen.
- Chili (46F), mashed potatoes (46F) not being adequately cooled to prevent the growth of harmful bacteria.
- Less than 50 foot candles of light was noted in food prep area where slicer is used.
- Observed that a proper protective shield is not provided for the light fixtures in kitchen
