Leesburg Restaurant Inspections: Lightfoot Restaurant, Sidebar

The Loudoun County Health Department recorded violations at several restaurants around Leesburg including Dairy Queen and Red Hot & Blue.

LEESBURG, VA — The Loudoun County Health Department cited violations at several restaurants around Leesburg and the rest of western Loudoun County. The most recent round of inspections occurred between March 16 and March 22.

Many COVID-19 restrictions around the state have relaxed, so health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

      • Observed that items that are unnecessary to the operation or maintenance of the establishment are being stored on the premises.
  • Silk Restaurant & Banquet, 1500 Market Street East Leesburg, VA 20176

      • Water from the handwashing sink at prep area was measured at a temperature less than 100°F (observed 73F). The hot water faucet has been removed. Bar handsink observed 52F.
      • Cold holding at Pepsi cooler at improper temperatures. Chicken 45F, sour cream 44F, paneer 43F.
      • The physical facilities are not in good repair: broken tile, stained walls, missing coving under dishwasher, plumbing, and ceiling tiles.
      • Kitchen lighting is <50 ft candles in prep area/cook line.

      • Cold holding at prep line cooler and salad prep cooler is not holding at proper temperatures
      • Potato soup and butternut squash soup - (prepared ready-to-eat foods) are not date labeled. Date label prepared items that are held >24 hours.

      • Employee drink jug along with 2 onions were observed on the drain board of 3 compartment sink that drains into the sanitizing basin.
      • Food residue was observed on the slicer blade guard and frame.
      • Employee pulled cooked chicken breast from walk in cooler and placed on line in warmer for reheating for lunch. The chicken breast internal temperature was recorded at 110 degrees F. while holding in warmer.
      • Lentils cooked yesterday was observed with an internal temperature of 45 degrees F while cold holding in the walk in cooler.
      • Sausage links were observed hot holding on the line from breakfast at 110 degrees F.
      • Chicken salad made this morning was stored on ice at line with an internal temperature of 62 F.
      • The high temperature dish machine food utensil temperature measuring sticker was for 180 F which is to high as the food utensils do not get that hot.

      • Observed shredded cheese in low boy cooler cold holding food item at a temperature of 44 degrees F.

      • Observed kitchen hand washing sink to have a sanitizer spray bottle stored in the sink. After removal of the spray bottle, observed a used knife stored in the sink. Also observed hand washing sink in the warewashing area blocked by a wood board.
      • Observed no hand drying provision at hand washing sink in the kitchen.
      • Observed no hot water at hand washing sink in the kitchen. Hand washing sink hot water nozzle was observed broken.
      • Observed raw animal protein (ground beef) stored above ready-to-eat (RTE) sauces in refrigeration unit
      • Observed chemical dish machine at the bar in use at 0 PPM chlorine. Also observed chemical dispenser in kitchen at 0 PPM chlorine.
      • Observed cut melon cold holding at improper temperature. Cut melon observed at 49F. Cut melon has been in unit overnight.
      • Observed no consumer advisory on the online menu for foods offered raw or undercooked. Food items include beef, fish, and select mixed drinks with a raw egg. Facility utilizes placards that allow the customer to scan the QR code to pull up the menu.
      • Observed chemical dish machine at 0PPM chlorine. After further review, a lemon cleaner disinfectant was used as the sanitizer for the dish machine rather than chlorine.
      • Observed reduced oxygen packaged fish thawing under refrigeration in the packaging. The packaging on the fish indicates the fish shall be removed from packaging prior to thawing. Also observed corn beef thawing at room temperature in the kitchen.

      • Observed food employee place corn bread on plates with bare hands.

      • Person in charge could not provide test strips for the 3 compartment sink sanitizer (quaternary).

      • Observed onions and chicken in containers being stored on the floor in walk-in cooler.
