Leesburg Restaurant Inspections: Violations At 15 Locations
The Loudoun County Health Department found violations at 15 restaurants during recent inspections in the Leesburg area.
LEESBURG, VA — A number of violations were uncovered at 15 restaurants in the Leesburg area, according to the Loudoun County Health Department. Cited restaurants included Subway, Red Hot & Blue, and Roy Rogers.
As coronavirus restrictions continue to fluctuate around the state, health inspectors are returning to conduct some restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Observed pans and utensils in sanitize solution in 3 compartment sink with 0 ppm sanitizer. Retested fresh sanitizer and was at 200 ppm.
- Observed pepper jack cheese (46F) at an improper cold holding temperature. Egg batter 60F at improper cold holding temperature.
- Observed a bag of lettuce (45F) prepped earlier in in walk in cooler at an improper temperature.

- Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food.
- Person in charge (PIC) was unable to provide describe how to respond to vomiting or diarrheal events.
- Observed raw shrimp stored next to containers of milk.
- Observed chemical (chlorine) dishwasher tested 0 ppm.

- Observed missing ceiling tile over cleaned stored utensils at the 3 compartment sink.
- Observed exterior door to trash receptacles not tightly closing in the corner.

- EHS observed a food employee wash their hands and arms at the 2 compartment prep sink.
- EHS observed a food employee smoking outside near the walk in cooler. The food employee then walked back into the kitchen into the food prep area to continue working and did not wash their hands.
- The first hand sink on the left when entering the kitchen is blocked with a trash can and other items. No soap was provided at the hand sink either.
- Observed a large black container of cut up raw chicken stored over a container of cooked spare ribs (ready to eat- RTE) and a container of brown sauce in the walk in cooler. EHS observed what appeared to be chicken juice pooled on the top of the lid of the sealed brown sauce container.
- EHS observed dried on food debris in certain crevices of the slicer. The slicer is used to slice raw chicken
- Cooked lo mein noodles noted as improperly cooled in the walk in cooler to prevent the growth of harmful bacteria. Noodles registered at 72F at 2:40pm and the food employee stated that they were cooked in the morning around 11am.
- Container of fried rice at the steam table noted as improperly hot holding.
- TCS (Time temperature control for safety) foods are cold holding at improper temperatures in the small prep cooler on the line. Raw proteins measuring at 59F. Ambient air temperature of cooler is measuring at 60F.
- EHS observed two small cock roaches crawling across one of the tables in the kitchen. Facility does pay for monthly pest control services.
- There is a sticky fly trap hanging from the kitchen ceiling near the cook line. Fly trap observed with dead flies on it.
- The interior of the rice cookers noted as no longer easily cleanable (pits, scored, and slightly rusted on edges)
