Leesburg Restaurant Inspections: Violations At Seven Locations
The Loudoun County Health Department found several violations during recent restaurant inspections in Leesburg and Middleburg.
LEESBURG, VA — Officials from the Loudoun County Health Department inspected multiple restaurants across the Leesburg area from July 28 to Aug. 3, including several locations that were cited with violations.
As coronavirus restrictions continue to loosen around the state, health inspectors are returning to conduct restaurant inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations at restaurants typically focus on factors that can contribute to food contamination. The local health department also performs a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.

- Date inspected: July 28
- Total violations and corrective actions: 5
- There is no CFPM on duty during inspection.
- Employee health policy for reporting signs and symptoms of illness not available.
- There is no written procedure (needs to be written) in facility for how to respond to V/D.
- TCS items (marinara) in walk-in does not have date marks
- Pizza by the slice needs to have Time as a public health control (TPHC) procedure.

- Date inspected: July 28
- Total violations and corrective actions: 4
- Both hand sinks in the facility do have paper towels for drying hands. The back sink does not have a paper towel holder (broken)
- Hot dog filled pretzel bites are hot holding at improper temperatures in the warmer. As per PIC temperature control is used and not time control although pretzels are discarded after 30 minutes for quality control.
- TCS foods are cold holding at improper temperatures in the low boy coolers.
- A pair of tongs used to pull baking sheets full of pretzels out of the oven dropped to the ground and a food employee placed them back on the oven for use without washing, rinsing and sanitizing them.

- Total violations and corrective actions: 7
- Observed no hand drying provision at hand washing sink near the 3 compartment sink.
- Observed employee washing dishes in the 3 compartment sink without the sink being set up with sanitizer. No sanitizer was used to wash dishes prior to the dishes being placed with other clean dishes.
- Observed several Time and Temperature Control for Safety foods (TCS) sitting out at room temperature above 41F (garlic and oil, tofu, cut tomatoes, shell eggs)
- Observed 3 compartment sink plumbing in disrepair. The drain was observed clogged and re-directed with a large plastic bin to a floor drain.
- Observed grease barrel on grass/ dirt behind the building. Surface is not nonabsorbent, smooth and easily cleanable.
- Observed floors under wok in need of cleaning. Also observed walls in facility near hood vent in need of cleaning
- Observed unsealed raw wood behind hand washing sink near 3 compartment sink. Also observed unsealed raw wood above 3 compartment sink used to store utensils.

- Observed time as a public health control being used for several food items in the facility with no written procedure.
- Observed several damp wiping cloths stored on surfaces of equipment.
- Observed men's restroom to not have a self closing door.

- Date inspected: July 30

- Observation observed on 7/27/21: No certified food protection manager. Not corrected at follow up inspection.
- Observation on 7/27/21: Observed dish machine appearing to be sanitizing by high temperature not reaching the required utensil surface temperature of 160F. Temperature measured by EHS read 120F. At follow-up, PIC showed EHS where chemicals should feed into dish machine. Dish machine still out of order. Not corrected
- Observation on 7/27/21: Observed no irreversible registering temperature indicator for dish machine (High temp) and not readily accessible for measuring utensil surface temperature. On follow-up dish machine chemical dispenser facility is working to repair. Machine will be low temp. Chlorine test strips will need to be available.
- Observation on 7/27/21: Observed pressure gauge on dish machine broken. Not corrected on follow-up inspection.

- Date inspected: Aug. 2
- Total violations and corrective actions: 4
- Observed the handwashing station at he beverage station being used as a dump sink. The handwashing station be the dish machine had trash.
- Cutting boards and slicer were not clean to sight and touch.
- Observation of cut, sliced tomatoes, mixed green, shredded lettuce cooling in prep cooler.
- Observed ice scoops in ice machine with handles touching ice.

- Physical facility is not observed maintained according to the food regulations.
