Up To 26 Violations Found During Manassas Area Restaurant Inspections
Health inspectors found as many as 26 violations during recent inspections in Manassas and western Prince William County.
MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between March 22 and April 3.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.
For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Here are the most recent inspections from the Manassas area, according to the Prince William Health District. Of note, Passion Fin Asian Bistro & Sushi in Gainesville had 26 violations and El Damazo Restaurant in Manassas had 20 violations.

Violations:
- During the inspection it was observed employees not properly washing their hands with an improper procedure and location. Also observed noncontinuous chicken in the walk in cooler that was cooked and placed into cooling without proper cooling procedure.
- There was no verifiable employee health policy available at the time of the inspection.
- There was no procedure available during the inspection to show how to clean vomit and diarrhea.
- Several employees were washing their hands at the prep sink.
- Several employees were seen rinsing their hands at the prep sink before returning to engage in food prep.
- The hand sinks were being a dump sink, and there was a fly swat resting on the hand sink as well.
- In the walk in cooler there were several raw animal food products that were stored above ready to eat food items.
- In the walk in cooler there were food items being stored without proper covering, also in walk in freezer there was food items being covered with dish rags.
- There were no stoppers for the 3 compartment sink in the basin to properly wash, rinse and sanitize dishes.
- There were cutting boards that were observed scratched, scored and no longer easily cleanable.
- In the walk in cooler there was a container of noncontinuous cooking chicken temp at 119F for 20mins cooling also salads that were prepped earlier in the day were temped between 45F-47F cooling for 1.5hr in the upright cooler. raw salmon prepped 1hr temp at 45F and cooked crab meat in the front sushi cooler. none of the items were properly cooled before placing into cold holding units.
- There were several cold holding units that did not have ambient air thermometers.
- There were multiple containers of food that were not labeled with the name of the ingredient/food item inside.
- The back door that leads into the kitchen was ajar and not protected from pest and rodents.
- In the walk in cooler there were containers of food on being stored on the floor under the shelving units.
- There were food items, ingredients in nonfood grade containers/home style storage containers throughout the facility.
- An employee had on a watch while washing their hands.
- There were scoops in containers of sugar and other bulk items with the handle laying in the food.
- In between use utensils were in containers of water that were room temperature.
- There were clean dishes being stored above the hand washing sink in the front part of the kitchen. Also clean dishes were being stored in between where prep tables were joined together.
- Throughout the establishment there were single service containers being reused.
- There were several raw wood shelves around the facility, there was also rusted shelving in the kitchen area.
- The hand sinks had significant spacing and not smooth caulking around the parts joining them to the other metal barriers.
- There were no test strips for the Chlorine chemical sanitizer solution.
- The hand sink in the front part of the restaurant (sushi bar) was slow to drain.
- In the restroom that was used by females did not have a trash can with a lid.

- The hand sink water in the female restroom did not reach 100F.
- In the Randell Prep cooler there was a the bottom of a metal container touching uncovered container of peppers.
- In the Randell 2 door prep cooler there was sliced cabbage 45F and chopped broccolini 46F.
- There was food containers that were stacked on top of each other without them being properly dried before stacking.
- The 1 door reach in cooler had a build up of ice on the bottom shelf of the unit.

- As discussed, provide, and properly install the ice machine unit to facilitate the cooling process.
- Prevent food exposure and contamination from customers traveling through the food establishment to access the toilet rooms. It was recommended to install a kitchen back door and install locks to the walk in cooler and other refrigerator units.
- Install approved wired shelving (easily cleanable, durable and corrosion resistant) above the 3-compartment sink/warewashing for air dry of clean utensils and equipment.
- Provide adequate storage with approved shelving (easily cleanable, durable and corrosion resistant) for the storage of kitchen clean utensils and equipment and at the 3-compartment sink/dishwashing area.
- Provide additional adequate dry storage with approved shelving, (easily cleanable, durable and corrosion resistant), dunnage racks, and/or carts for the storage of dry food, utensils, single-service and single-use articles. Items must be stored 6" off the floor.
- Remove all extra equipment such as, refrigerators, tables, and cooking equipment from premises.
- Install ambient temperature thermometers in all cold holding equipment.
- Remove and replace all rusted shelving units and shelves including the one inside the walk-in cooler and inside the 2 doors freezer.
- Provide additional light in the walk-in cooler.
- Replace all stained ceiling tiles.
- Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles.
- Install a mop rack at the mop sink area.
- Relocate the female toilet room paper towel dispenser to the handwashing sink area.
- Provide handwashing signage at all handwashing sinks used by food employees.
- Install self-closing devices at the toilet room doors.
- Employee belongings and clothing shall not be stored in food prep, food storage, and cooking areas.

- During the inspection there was a container of clams that did not have a shellfish tag and the person in charge could not verify source. The 3 compartment sink did not have plugs to properly wash, rinse and sanitize. Also the stationary dishwasher was not properly sanitizing food contact surfaces. There were food items on the menu that are served undercooked and raw but there was no consumer advisory nor disclosure for the eggs and burgers.
- There was not a valid person in the establishment with a certified food protection manager certificate.
- There was no verifiable employee health policy available at the time of the inspection
- An employee was observed eating at the counter in the bar.
- An employee was observed washing their hands at the 3 compartment sink.
- The hand sink in the bar area did not have a hand washing sign.
- There was a box of raw clams that did not bare a shellfish shippers tag.
- The was a container of clams that did not bare a shellstock tag.
- In the McCall 2 door reach in cooler there was raw food items stored above ready to eat food items also in the 2 door McCall reach in cooler there was raw chicken, raw eggs and raw beef was stored in the incorrect order to prevent potential contamination.
- The establishment was unable to hold sanitizer in the 3rd basin. The CBI stationary dishwasher was not properly sanitizing dishes. The person in charge did not know how to properly set up the 3 compartment sink to wash dishes.
- The menu did not have a consumer advisory nor a disclosure on the menu indicating that burgers and eggs can be served undercooked or raw.
- At the metal rack there was personal items stored above and beside the clean dishes.
- There was a container of raw clams were in a motor oil box.
- In the bar area there was a raw wood cutting board, and in the kitchen there was several wood utensils.
- The 2 door upright reach in cooler the bottom portion to hold the cooler up was in disrepair.
- The bottom part of the prep table and the metal rack where food containers and utensils rest are not smooth and easily cleanable, there was also foil lining on shelves.
- The faucet at the 3 compartment sink was leaking.
- The ceiling and the walls in the kitchen area were yellow and not clean to sight and touch.
- There was power tools and other equipment that did not pertain to the operation of the food establishment.
- Throughout the kitchen there were employee personal items laying next to clean equipment, and stored in the kitchen area that could contaminate food items.
