Manassas Health Inspections: 15 Violations At Elementary Schools
The Prince William Health District recorded violations at several Manassas facilities during a recent round of inspections.
MANASSAS, VA — Several facilities around the Manassas area recorded violations during inspections from Oct. 19 to Oct. 25.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Date inspected: Oct. 20
- Total violations: 6
- There was no verifiable employee health policy was not available at the time of the inspection.
- There was shredded cheese was 6 days past discard date and pudding was 2 days past discard date in the reach in cooler.
- The facility was using unpasteurized eggs to serve HSP.
- PIC informed us that he cooks the salmon to 140F, to serve to HSP.
- There was a pan of cut lettuce (45.4F) placed in the Atosa prep station (34F) at 7:30 a.m.
- There were 5 packs of ROP fish; thawed but still sealed in the package.

- Yuca - Temperature Control for Safety (TCS) food cooked and cooled yesterday 10/24/22 stored in covered container in the walk in cooler at 45°F. Not being adequately cooled from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hour:
- George C. Round Elementary School, 10100 Hastings Dr Manassas, VA 20110

- Observed liquid hand sanitizer stored in such a way that they could contaminate ice in the ice machine and vegetables in the prep sink.
- The Walk in Cooler was overstocked and is not sufficient in number or capacity to meet the food storage demands of the establishment.
- The ambient air temperature measuring device on the warming cabinet used for hot holding is not maintained in good repair and/ or not accurate within the intended range of use.
- The nonfood contact surface (shelving) of the reach in cooler was observed with corrosion and not smooth for cleaning purposes.
- The nonfood-contact surface of the fan in the prep area is not kept free of an accumulation of dust, dirt, food residue, and/or other debris.
- The diameter of the air gap between the water supply inlet and the flood level rim of the ice machine condensate drain is less than twice the diameter of the water supply inlet.
- Observed a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. The mop sink faucet vacuum breaker is not designed for the continuous pressure created by the "Y" adapters.
- Ceiling in mop sink area is not smooth and easily cleanable.
- Less than 10 foot candles of light was noted in the mop sink area. Using a light meter, measured 2.7 & 3.7 fc of light at 30 inches from floor.

- Open drinking container (coffee cup w/ coffee) was stored (on the food prep table) in a manner that may contaminate food, food contact surfaces or utensils.
- Spray bottle of chemical (pink solution) on shelving near warewashing machine unlabeled.
- Scoop for rice in dry storage area was stored with the handle down in the product.
- The hose attached to the mop sink faucet was observed to be fully extended into the basin thus creating a potential backflow issue.

- Total violations: 2
- Cut lettuce and tomato salad found to be cooling improperly in the Traulsen 6 door reach-in refrigerator.
- Light bulb in hood system burnt out. Glass shield is discolored.

- Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Sliced tomatoes observed on cold holding at improper temperatures of 52 F on the cold holding serving line and in the display case in front.
- The day before prepared ready-to-eat (RTE) tuna in a white container stored in the the walk in cooler unit is not properly date marked.

- Employees and conditional employees are not aware of the reporting procedures concerning information about their health as they relate to the symptoms caused by illness, infection, or other source that is associated with an acute gastrointestinal illness or a lesion.
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- The handwashing sink next to the ice machine is not equipped to provide water at a temperature of at least 100°F through a mixing valve or combination faucet.
- No disposable towels were provided at the hand washing lavatory in the lady's room and next to the prep sink in the kitchen.
- Unwrapped or uncovered food in the walk in cooler such as refried beans, cooked black beans, rotisserie chicken and raw beef.
- Cooked beans, chicken soup and cooked beef strips prepared and held in the food establishment for more than 24 hours is not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solutions.
- The (faucet/fixture) was not easy to clean because the component is damaged or condition is in poor repair of the handwashing sink next to the ice machine and the prep sink.

- There was cut lettuce (44F) in sandwich prep station since 6am, salad (50F) and cut strawberries (49.5F) since 8:30 a.m. Quiche (88F) in the walk in cooler since 9 a.m.
- Menu indicating eggs cooked any style is offered, but being done so with unpasteurized eggs.
