Manassas Health Inspections: 16 Violations At 1 Restaurant
The Prince William Health District recorded violations at facilities around the Manassas area during recent inspections.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between May 31 and June 5.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- There were no stoppers for the 3 compartment sink.
- The faucet at the hand sink in the kitchen was leaking, also the faucet at the 3 compartment sink was leaking.
- There was no air gap at the 3 compartment sink.

- There was no verifiable employee health policy was not available at the time of the inspection.
- There was no procedure available during the inspection to show how to clean vomit and diarrhea.
- An employee was observed drinking from a cup without a lid in the prep area.
- An employee was observed mixing masa at the hand sink near the dishwasher.
- There were several raw food items in the walk in cooler that were stored above other raw food items in the incorrect order according to cook temperature.
- 3 compartment sink was improperly set up.
- The dishwasher was not properly sanitizing the dishes.
- There was spray bottle of toxic chemical that did not have the name on them.
- There were food items, ingredients in nonfood grade containers in throughout the facility.
- An employee had a band aid on her finger and was handling food without a glove covering that same hand.
- An employee was observed working with food without a proper hair restraint on.
- The facility was reusing single use containers for scoops for seasoning and storage of items in the walk in cooler.
- There was cardboard lining in the walk in cooler and on the metal shelving where the microwave is kept.
- The facilities uses molcajetes which are not smooth, and easily cleanable.
- There was ramekins that were used as stoppers to hold water in the 3 compartment sink basin.

- Total violations: 14
- Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissible through food.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- A food employee failed to wash their hands before engaging in food preparation.
- Using bowl to dispense rice and tomato sauce. Bowl was left inside the food container in the walk in cooler.
- Unwrapped or uncovered tomato sauce and cut cucumbers in the walk-in cooler.
- Raw animal food (untreated shelled eggs) stored over ready-to-eat food (rice and cooked green beans) in the walk-in cooler.
- The prepared ready-to-eat (RTE) rice, green beans and refried beans in the walk-in cooler were not properly dated for disposition.
- The following raw and/or undercooked foods (raw eggs and undercooked beef patties - burgers) are provided on the menu, menu board, table tent or brochure without proper disclosure.
- Poisonous chemicals (spray bottle of glass cleaner and hand sanitizer in dispenser) found stored or displayed with food, equipment, and single service items in such a way as to contaminate items.
- Unlabeled food containers with the following food items that are not easily identified by appearance: Sugar and flour.
- In-use cooking spatulas stored in a water container of water (70°F) next to the grill, improperly stored between use.
- Toilet room door is not tight fitting. and/or provided with a self- closing door.
- The ceiling surface of the mop sink area is not smooth, durable, easily cleanable, and/or nonabsorbent.
- The toilets room doors and kitchen walls are not cleaned as often as necessary to keep them clean.
