Manassas Health Inspections: 16 Violations, 18 Violations At Eateries
Restaurants around the Manassas area recorded as many as 18 violations during recent inspections from the county health department.
MANASSAS, VA — Several restaurants in the Manassas area recorded violations during recent health department inspections between Jan. 18 and Jan. 25.
COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.
Here are the most recent inspections from the Manassas area, according to the Prince William Health District. Of note, Rockwood had 18 violations, and Ashton Family Restaurant had 16 violations.

Violations:
- There was no verifiable employee health policy available at the time of the inspection.
- There was no procedure available during the inspection to show how to clean vomit and diarrhea.
- An employee was observed eating and drinking from a cup without a lid at a prep table with an apron on.
- An employee was observed handling ready to eat tomatoes with bare hands. Also at the bar there was an employee cutting ready to eat lemons with bare hands.
- There were no individual towels at the hand sink in the kitchen across from the dishwasher.
- In the sandwich prep there was raw chicken, over raw fish. Also in the walk in cooler, there was raw beef over raw fish and calamari.
- An employee was washing/rinsing utensils in the prep sink.
- In the walk in cooler and the sandwich prep there was raw steak 53F grilled chicken 41F raw breaded chicken 52F coleslaw 45F sliced tomatoes 50F grilled chicken wings 51F chicken wings 52F raw chicken 55F sliced cheese 53F.
- There were several cold holding units that did not have ambient air thermometers.
- An employee was observed working with food without a proper hair restraint on.
- Several sanitizer buckets were stored on the floor.
- In between use utensils were in containers of water that was room temperature.
- The slicer was observed to be clean but not covered and Clean utensils were not inverted with handles up to prevent contamination.
- There was food containers that were stacked on top of each other without them being properly dried before stacking.
- There was single use black to go cups being used as scoops.
- The walk in cooler was not properly working and not keeping food items 41F or below.
- The facility had several wood utensils that are used to cook.
- There were no test strips for the Chlorine chemical sanitizer solution.

- Refrigeration unit found to be capable of holding potentially hazardous food items in cold hold in a temperature of 41°F. Unit was observed to be set for 45*F.

- There was no verifiable employee health policy available at the time of the inspection.
- There was no procedure available during the inspection to show how to clean vomit and diarrhea.
- A hand washing sign was not posted at the hand sink at the bar.
- Several of the cutting boards were scratched, scored and no longer easily cleanable.
- The ES2000 Stationary dishwasher was not properly sanitizing food contact surfaces.
- There was a container of lettuce 48F queso cheese 50F in the upright true reach in cooler.
- The menu has food items such as steak and eggs that can be served undercooked but did not have the reminder statement to inform customers of potential food borne illness.
- There were several spray bottles without the name of the chemical on the outside.
- There were several cold holding units that did not have ambient air thermometers.
- Sanitizer buckets were stored on the floor of the kitchen.
- In between use utensils were in containers of water that were room temperature.
- The slicer and stand mixer was observed to be clean but not covered/Clean utensils were not inverted with handles up to prevent contamination.
- There were several raw wood shelves and milk crates that are not easily cleanable.
- The hand sinks, 3 compartment sink, dishwasher drainboard, and mop sink had significant spacing that is not easy to clean behind.
- The container the was holding clean dishes was observed to covered in debris and not clean to the sight or touch.
- The overall facility to include the walls and ceiling need to be cleaned. There was visible dirt, debris and grime on several nonfood and food contact surfaces.
