Manassas Health Inspections: 17 Violations At 1 Restaurant

Several restaurants around the Manassas area recorded violations during recent inspections from the county health department.

MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Nov. 1 and Nov. 6.

COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

      • Equipment food contact surfaces/utensils were not observed cleaned between working with raw foods and ready-to-eat foods. Utensils stored in trays of raw chicken.
      • Observed corrosion on the walls inside the walk in cooler.
      • Observed excessive amounts of frost build up at walk in freezer caused by leaking from condensation. REPEAT VIOLATION.
      • Observed a Y valve splitter under pressure at mop sink with one hose attached to cleaning chemicals.
      • Observed multiple ceiling and wall areas of food prep area in disrepair thus a potential for cross contamination of prepared foods.
      • Observed that inadequate lighting was provided in the chemical storage areas.

      • Observed warewashing machine was not working. Three compartment sink is being used to wash. rinse, and sanitize.
  • El Espino Restaurant, 8444 Centreville Rd Manassas Park, VA 20111
    • Date inspected: Nov. 6
    • Total violations: 17
      • Employees are not monitoring holding temperatures of time/temperature control for safety foods to ensure that they are properly held hot or cold.
      • Employees are not aware of or are not practicing proper methods to rapidly cool potentially hazardous food (PHF).
      • Employees were observed not properly sanitizing cleaned multiuse equipment and utensils.
      • Raw animal food (unpasteurized shell eggs) stored over ready-to-eat food )seafood) in the refrigeration unit.
      • Chlorine sanitizing solution used was not at an acceptable concentration. The dishwasher machine chlorine concentration was 0 PPM. All food contact equipment were not properly sanitized.
      • Black beans cooked day before at 45°F in the walk in cooler - was not cooled within 2 hours from 57ºC (135ºF) to 21ºC (70ºF); and/or within a total of 6 hours from 57ºC (135ºF) to 5ºC (41ºF) or less.
      • Multiple TCS food (see food items list) in the 2-door glass refrigerator were at improper cold holding.
      • The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without a reminder statement:
      • The 2-glass door refrigerator (50°F) is not maintaining time/temperature control for safety (TCS) foods at 41°F or below.
      • Multiple bar stools were observed in a state of repair and condition preventing the equipment to be used as designed.
      • The basins of the 3-compartment sink are not in good repair was observed in a state of repair and condition preventing the equipment to be used as designed. The 3-compartment sink basin cannot be use for manually cleaning and sanitized food contact equipment and utensils.
      • Walk in cooler shelving are heavily corroded and not easily cleanable, in a state of repair and condition preventing the equipment to be used.
      • The nonfood contact surface of the wooden shelving under the microwave oven is not designed or constructed to be easily cleanable.
      • There is no data plate on the warewashing machine.
      • There is a leaking under the ice machine. Accumulation of water under the equipment.
      • The male toilet room door is not cleaned as often as necessary to keep them clean. Also needs to be painted.
      • This is a non-smoking food establishment. Hookah and other smoking paraphernalia present in in the establishment. It is appeared that they are in use.
  • Hangry Joe's Hot Chicken, 7629 Linton Hall Rd Gainesville, VA 20155

    • Total violations: 1
      • There was a container of chili oil (68F) that had been prepared the day before and cooled, in the qualite food warmer reheating.
