Manassas Health Inspections: 18 Violations At 1 Restaurant

The Prince William Health District recorded violations at several facilities around Manassas and Gainesville during recent inspections.

MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between May 1 and May 9.

Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Jimbo's Grill, 7901 Heritage Village Plz Gainesville, VA 20155
    • Date inspected: May 1
    • Total violations: 10
      • There was no procedure available during the inspection to show how to clean vomit and diarrhea.
      • The hand sink was being used for other means than washing hands.
      • A hand washing sign was not posted at the hand sink in the bar area.
      • In the walk in cooler there was raw chicken and raw eggs on the shelf above raw beef and raw fish.
      • The 3 compartment sink did not have the capability to hold water nor sanitizer in the basins, also the chemical dishwasher was not properly sanitizing food contact surfaces.
      • The chemical sanitizer that was made in site from chlorine was measured to be above 100ppm.
      • There was personal items above the prep station areas.
      • A container of diced chicken was placed in a prep station cooler covered that was cooked around 10am, temp at 46F.
      • Several of the cold holding units were missing an ambient air thermometer.
      • There was a slab of wood that was being used to hold up a potato chopper.
  • La Finca Mexican Restaurant, 7615 Heritage Village Plaza Gainesville, VA 20155
    • Date inspected: May 1
    • Total violations: 14
      • There was no verifiable employee health policy was not available at the time of the inspection.
      • There was no procedure available during the inspection to show how to clean vomit and diarrhea.
      • An employee was eating out of a container with bare hands in the kitchen prep area.
      • There was no hand soap at the hand sink in the bar area.
      • A hand washing sign was not posted at the hand sink in the bar area.
      • The sink was not able to hold water or sanitizer in the 3 compartment sink.
      • There were two big containers of refried cooked beans, temp at 56F and 58F.
      • There was 2 big containers of refried beans in the walk in cooler that were placed in walk in cooler the day before. One container temp at 56F and the other was 58F. Cooling was not done properly.
      • There were packs of Reduced oxygen packaging salmon were in metal pan completely thawed on the counter.
      • The facility was reusing chicken seasoning containers as sanitizer buckets.
      • The prep table and the metal rack where food containers and utensils rest are not smooth and easily cleanable, also there was foil covering the top portion of the 4 burner stove.
      • The establishment uses containers to hold cooked food that has cracks and crevices that are not smooth and easily cleanable.
      • There were no test strips for the Chlorine chemical sanitizer solution.
      • The sandwich prep refrigeration was not properly discarding of condensation inside, there was water buildup in the bottom portion of the refrigerator.

    • Date inspected: May 2
    • Total violations: 3
      • The commercially processed ready-to-eat (RTE) Tomato sauce dated on 4/14/2023 and corn date on 4/18/2023 in the refrigeration unit was held for more than 7 days after the container was opened.
      • Employees observed working in the food service area without proper hair restraints.
      • Mop not hung up to air dry.

    • Date inspected: May 3
    • Total violations: 6
      • Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: no written documentation was observed.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • In-use utensils improperly stored between use. Observed thongs being stored on oven handle between uses where the cook's pant lag, apron, or other clothing part could come in contact.
      • There is no data plate on the ware washing machine behind the bar.
      • Observed that the walk-in cooler (beverages) and the wall behind the ware washer are both in need of cleaning.
      • Light bulb/fixture in dry storage area observed to be not shielded, coated, or otherwise shatter resistant.
  • CraftWorx Taproom, 5615 Wellington Road Suite 101 Gainesville, VA 20155
    • Date inspected: May 3
    • Total violations: 18
      • There was no person in the establishment with a verifiable certified food protection manager certificate.
      • There was no verifiable employee health policy was not available at the time of the inspection.
      • An employee was eating and drinking from an open container on the counter in the kitchen.
      • A hand washing sign was not posted at the hand sink in the kitchen nor at the bar.
      • There were no individual towels at the hand sink in the bar area.
      • The establishment is being supplied Reduced Oxygen Pack food from another establishment that has not been approved as a wholesaler for distributing food to another facility.
      • 3 compartment sink was set up incorrectly, rinse, wash, sanitize was the order it was set up in. Also there were only 2 stoppers.
      • An employee had placed beer cheese (55F, 1hr) in the hot holding unit to reheat food that was cooled down from the day before, on a steam table the following food items were being reheated Chili (110F, 1hour), Mexican corn dip (89F, 45 mins)
      • There were food items such as chicken wings and ranch dressing that was prepared on saturday that were not date marked.
      • There was personal items in above the dump sink/dishwasher in the hall way where clean dishes are stored.
      • There were several packages of Reduced Oxygen packaged meat that was transported from another facility that were not properly labeled with the criteria to not have a HACCP Plan. Chopped Brisket 15 bags, sliced brisket 22 bags, pulled pork 16 bags, beef 11 bags, chicken 10 bags.
      • There were utensils in an upright drawer storage containers.
      • An employee was observed working with food without a proper hair restraint on.
      • In between use utensils were placed into containers of room temperature water.
      • There were milk crates being used as storage food nonfood items.
      • There were no test strips for the Quaternary Ammonium and Chlorine chemical sanitizer solution.
      • The floors under the cooking area and the 3 compartment sink were heavily covered in grease.
      • There were ceiling tiles missing from above the 2 door true reach in cooler near the dishwashing machine in kitchen.

    • Date inspected: May 3
    • Total violations: 8
      • Observed person in charge directly contacting ready-to-eat ( ice) with their bare hands.
      • The handwashing sink located in warewashing machine area is found to have hot water at less than 100 degrees.
      • Flat of raw bacon stored over ready to eat pasteurized egg in walk-in cooler (WIC).
      • Open bags of chicken were observed in mini freezer.
      • Milk temperature was measured at 43 F, at mini one door refrigerator in front.
      • Employee was observed touching ice was with bare hand.
      • Employees observed working in the food service area without proper hair restraints.
      • In-use utensils ( ice scoop) improperly stored over the ice.
  • The Cupcake Mafia, 8711 Libeau Drive Manassas, VA 20110
    • Date inspected: May 4
    • Total violations: 6
      • The hand sink was blocked with a container of soap jug.
      • The espresso machine was not clean to the sight or touch, also the panni press was not clean to the sight or touch.
      • There was a bag of hard salami and pepperoni removed from original packaging that was not properly date marked and were opened earlier this week.
      • There were food utensils in non-food grade containers.
      • Single service items were visibly soiled.
      • The hand sink was not properly caulked to the wall to prevent dirt seeping behind it.

    • Date inspected: May 5
    • Total violations: 10
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • A food employee failed to wash her hands before touching food contaminant surfaces. ( food thermometer)
      • Open bags of food/commercially processed food were observed one door upright freezer in the kitchen.
      • Equipment food contact surfaces( thermometer) were not observed cleaned and sanitized between working.
      • Observed commercially processed slices of gyro, turkey, briskets, steak, at improperly cold holding temperatures (45°F, 45°F, 45°F, 45°F) at the front cold holding unit.
      • The deli meat product wrapped portioned observed in the prep cooler unit were within cooling time.
      • Food stored ( bread) close to handwashing sink where it is subject to splash, dust or other contamination.
      • Employees observed working in the food service area without proper hair restraints.
      • Observed missing tiles in the Walk in Cooler floor and door of Walk in Cooler were not in a good repair.
      • The handwashing sink located in the kitchen's faucet were observed leaking.
  • Kona Ice of Bristow, Nokesville & Quantico, 8104 Whitting Drive Manassas, VA 20112

    • Total violations: 2
      • There was no verifiable employee health policy was not available at the time of the inspection.
      • Milk crates were being used to hold syrups for the shaved ice.

      • There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.
      • Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissible through food.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
