Several restaurants around the Manassas area recorded violations during recent inspections from the county health department.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Nov. 29 and Dec. 5.
COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- An employee started with adding soap to their hands then proceeding with the routine, this was observed twice.
- There was an employee observed rinsing hands at the 3 compartment sink.
- There was food debris and observation of employees using the hand sink for things other than hand washing.
- There were several food items in the 1 door upright cooler (45F) with food temperatures: 5 bags of kale (51F), 3 bags of Brussel sprouts (45F) and 3 bags of arugula (54F).

- The handle for scoop that is used for ice in drinks was resting on the ice.
- In between use utensils were in containers of water that were room temperature.
- There was single service items that were next to the hand sink in the kitchen without a partition to prevent contamination.
- The 1 door upright reach in cooler was not properly holding at 41F or below. It was observed holding at 45F.
- The floor in the bar area was not smooth and not easy to clean. There were cracks and crevices that prevent the floor from being cleaned properly,

- There were several employees drinking from unlidded cups and cups without lids around the kitchen.
- There were several employees that were rinsing/washing hands at the 3 compartment sink.
- In the walk in cooler there was raw chicken stored on the shelf above raw beef.

- In several of the cold holding units there was no ambient air thermometer inside.
- There were several containers that did not contain the name of the food item/ingredient inside.
- There were several food employees working with food that did not have on hair restraints.
- There was a stand mixer that was observed to be clean but not covered to prevent contamination.
- There was several nonfood contact surfaces that were covered in foil and cardboard.
- The walk in cooler temperature was holding a temperature of 48F.
- There was several wood utensils that were being used to cook.
- There were no chemical test strips for the chlorine sanitizer.
