Manassas Health Inspections: 21 Violations At 1 Restaurant
Several restaurants around the Manassas area recorded violations during recent inspections from the county health department.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Nov. 7 and Nov. 14.
COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- The bathroom in the kitchen was not self closing and had the door open.

- There was not a valid person in the establishment with a certified food protection manager certificate.
- There was no verifiable employee health policy was not available at the time of the inspection.
- There was no procedure available during the inspection to show how to clean vomit and diarrhea.
- Two employees were drinking from unlidded mugs in the kitchen.
- An employee was using the hand sink to clean washing cloths.
- Several of the cutting boards including the ones of the sandwich prep area were scratched and scored and no longer easily cleanable. the stationary.
- There was a tray of empanadas left out overnight temp at room temp.
- There was a container of zucchini dated 11/4/2023 in the walk in cooler also a container of cooked chicken dated 11/6/2023 in the walk in cooler at the time of the inspection.
- The menu contains a raw food product that does not contain a written statement that includes asterisk marking the food item "Kibbe Naye - raw steak tartar"
- There were several working containers that did not bare the name of the chemical/liquid inside.
- The person in charge explained that a container of rice and lubica was placed in the walk in cooler in large pot. The rice and lubica was temp at 68F.
- There was a pack of raw meat on the 3 compartment sink thawing at room temperature.
- There were several cold holding units that did not have ambient air thermometers.
- There were a container of potatoes and onions in nonfood grade containers.
- There were scoops in containers of sugar and other bulk items with the handle laying in the food.
- There was a container of utensils that were not inverted to have the handles facing upwards.
- The establishment was reusing single service containers as sanitizer buckets and food storage.
- The Blodgett oven was on a broken table that was being held up by two table legs and cement blocks supporting the front weight of the oven.
- There were no test strips for the chemical dishwasher.
- The prep tables bottom shelf were rusted and no longer easily cleanable. Also there were several basket and containers that holds clean dishes that were covered in dirt and debris, were not clean to sight or touch.
- The floors and walls of the facility were covered in food debris and other items that were not clean to the sight or touch.

- Handwashing sink by 3 compartment sink was blocked.
- Warewashing machine was in state of disrepair.
- Ground beef measured at 47 F at walk in cooler.
- The nonfood contact surface of the walk in cooler floor is not designed or constructed to be easily cleanable.
- The door gaskets of the following unit( Walk in Cooler, Two door upright refrigerator) are damaged.
