Manassas Health Inspections: Duck Donuts, Smoothie King
The Prince William Health District recorded violations at several facilities around Manassas during recent inspections.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Dec. 7 and Dec. 13.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy."

- Encrusted grease deposits and/or other soil deposits were observed on the food contact surfaces (pizza pans) and ware washer racks.
- Closed Y valve at mop sink to supply chemical dispensing system observed under pressure (faucet handles on). This practice will cause the back flow prevention devise to fail risking contamination of the water for the establishment.

- The handwashing facility located at the ware washer is blocked, preventing access by employees for easy handwashing.
- Observed the following ready-to-eat, potentially hazardous food being held in a container or package that does not bear a date or day: Cooked Rice in Walk in Cooler
- A review of the menu with the foodservice operator indicates that there is no consumer advisory for the beef that (crying Tiger steak) may be served raw and/or undercooked
- Observed employees' medicines are not properly located to prevent contamination of food and food contact surfaces. Also observed chemical lighter for stove stored on shelf above food prep area.
- The ambient air and water temperature measuring device that is scaled in Celsius or dually scaled in Celsius and Fahrenheit located in the three cooling units are not accurate and/or easily readable.
- Observed raw chicken stored uncovered in walk in cooler where it is subject to splash, dust or other contamination from dusk build up on walk in refrigeration unit.
- The ambient air temperature gauge on the walk-in cooler and both reach in prep coolers is not in good repair and/ or not accurate in the range of use. Observed temperatures recorded from PWHD ambient thermometer.
- The nonfood contact surface of the wood knife mounting rack is not designed or constructed to be easily cleanable.
- The nonfood-contact surface of the reach in freezer is not cleaned at an appropriate frequency.
