Manassas Health Inspections: Emiliano's, Mum Mum Restaurant

Several restaurants around the Manassas area recorded violations during recent inspections from the county health department.

MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Dec. 6 and Dec. 12.

COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Mum Mum Restaurant, 10945 George Mason Circle Manassas, VA 20110
    • Date inspected: Dec. 11
    • Total violations: 8
      • An employee was washing dishes at the hand sink.
      • The hand sink next to the cook station was blocked with dishes.
      • The ecolab chemical dishwasher in the bar area was not properly sanitizing food contact surfaces.
      • 2 containers of lettuce were on the counter temp at 54F, they had been out for an hour.
      • There were utensils held in 109F water between use.
      • The hand sinks and the 3 compartment sinks had spacing or cracked sealing that was not adjoining the equipment to the walls.
      • The ecolab bar dishwasher was not properly sanitizing.
      • There was no covered receptacle in the bathroom indicated for use by women.
  • Kabob Zone, 10945 George Mason Cir., A-6 Manassas, VA 20110
    • Date inspected: Dec. 11
    • Total violations: 4
      • There was no verifiable employee health policy available at the time of the inspection.
      • There was no procedure available during the inspection to show how to clean vomit and diarrhea.
      • There were packs of Reduced oxygen packaging fish in the walk in cooler that were not removed from the packaging.
      • Employees were observed working with food without proper hair restraint on.
  • Cuna Del Sol Restaurant, 7779 Sudley Rd. Manassas, VA 20109
    • Date inspected: Dec. 11
    • Total violations: 6
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • Water from the handwashing sink at kitchen was measured at a temperature less than 100°F.
      • The sign that notifies food employees to wash their hands was not provided.
      • Raw chicken was stored above raw beef at walk in cooler.
      • The following raw and/or undercooked foods (Rib Eye) are provided on the menu, menu board, table tent or brochure without proper disclosure.
      • Missing tiles was observed in the kitchen floor.

    • Total violations: 2
      • The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.

    • Total violations: 3
      • There is no Northern Virginia Certified Food Protection Manager on duty during hours of operation.
      • Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.

    • Date inspected: Dec. 12
    • Total violations: 6
      • Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy."
      • A sign or poster that notifies food employees to wash their hands is not provided at all lavatories used by food employees.
      • Observed that the continuous towel system used at the handwashing sink is not providing clean towels and/or is not operational.
      • Raw animal food (shell eggs) cold holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
      • Observed large bags of rice stacked on floor of dry storage area.
      • Observed that mops are improperly stored between use.

    • Total violations: 10
      • There is no person in charge with a valid Food Protection Manager Certification from an accredited agency recognized by the Conference for Food Protection.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • A sign or poster that notifies food employees to wash their hands is not provided in all handwashing sink.
      • The handwashing sink in women toilets, kitchen and bar area water temperature was measured less 100 F.
      • There was no chemical sanitizer was available for 3 compartment sink to properly sanitize food contact surfaces.
      • There was no temperature measuring device located in all prep cooler.
      • Exist door was not properly closed with opening gap that allow insect getting into kitchen.
      • The walk in cooler and walk in freezer door was not self closing.
      • The prep cooler across the grill was not in working condition.
      • No test strip was available to check the concentration of chemical sanitizer for 3 compartment sinks or any sani bucket that will be used for wiping cloth.
