Manassas Health Inspections: Foster's Grille, Tejanos Cantina
The Prince William Health District recorded violations around Manassas, Gainesville, Nokesville and Bristow during recent inspections.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Dec. 14 and Dec. 20.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Date inspected: Dec. 16
- Total violations: 15
- There was no verifiable employee health policy was not available at the time of the inspection.
- In the reach in Turbo Air cooler, there was raw steak above ready to eat tortillas, there was raw shrimp on the same shelf as ready eat vegetable.
- The cutting boards are heavily scored and scratched, and no longer easily cleanable.
- There was 2 jugs of buttermilk dated 12/9, a container of mushrooms dated 11/30 that were still in cold holding past the date of discard.
- There was a bottle of rubbing alcohol above food contact surfaces and utensils, there was 2 bags of soap in the dry storage above RTE foods and single serve items.
- There were 3 packages of Reduced oxygen packaged (ROP) fish in the reach in cooler.
- There were food containers that held some sort of white powder/crystal food items.
- There was rice, flour and black beans in storage containers that were not marked as food grade safe.
- The two employees actively handling food did not have hair restraints on.
- The clean food utensils were placed in several dirty tubs and not inverted to prevent contamination.
- Sour cream containers were being reused to hold several food items.
- Metal tables and metal stand that are holding the food utensils were no longer easily cleanable
- There was no flow of sanitizer to the dishwasher, the test strip indicator showed a 0ppm result.
- There was no covered receptacle in the bathroom indicated for use by women.
- The overall facility needs cleaning particular attention to the dry storage area.

- No disposable towels were provided at the hand washing lavatory in the service line area.
- Wet wiping cloth buckets improperly stored.
- The handwashing sink basin at the service line is slow to drain.
- Wet mop is not placed in a position that allows it to air-dry without soiling walls, equipment, or supplies.

- Observed the handwashing station at the grill/prep area is being used for purposes other than washing hands.
- There was no temperature measuring device located in the reach in prep cooler where the meat is being stored.
- Wet wiping cloth buckets improperly stored.
- The nonfood-contact surface of the glass top and reach in freezers is not kept free of an accumulation of dust, dirt, food residue, and/or other debris.
- There is no refuse container at the grill/prep area hand sink.

- Observed a Y valve attached at the mop sink faucet to supply water to chemical dispensing unit. Continued use could cause a failure of the backflow prevention devise and potentially contaminate the drinking water supply of establishment.
