Manassas Health Inspections: Mission BBQ, Pupuseria Dona Azucena

The Prince William Health District recorded violations at a pair of Manassas restaurants during recent inspections.

MANASSAS, VA — A pair of facilities around the Manassas area recorded violations during inspections from Nov. 2 to Nov. 7.

Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

    • Date inspected: Nov. 4
    • Total violations: 6
      • There was no procedure for clean up of vomit and diarrhea.
      • On the Hot Holding table, there was pan of pulled pork at 121°F
      • There were several food items in huge tubs in the walk in cooler that were out of temperature: cabbage 47°F, cabbage 48°F, shredded cheese 47°F, white shredded cheese 45°F
      • There were 4 containers of baked beans and 3 containers of green beans that bared dates that were outside of the 7 days.
      • There were 7 packs of ROP fish in packaging completely thawed in the walk in cooler
      • The dishwasher final rinse temperature did not reach 160°F verifiable with a irreversible test strip
  • Pupuseria Dona Azucena, 9884 Liberia Ave Manassas, VA 20110
    • Date inspected: Nov. 7
    • Total violations: 3
      • Refried beans cooked on November 5, 2022, are not being adequately cooled from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hour: Refried Beans (5 containers) hours in the Walk in cooler observed at 45,45, 46, 47, 48°F.
      • Temperature Control for Safety Food Milk at cold holding at improper temperatures (45° F)
      • A review of the menu with the foodservice operator indicates that there is no consumer advisory for the steaks and eggs that may be served raw and/or undercooked.
