MANASSAS, VA — A pair of facilities in the Manassas area recorded violations during recent health department inspections between Aug. 9 and Aug. 15.
COVID-19 restrictions have relaxed around the state, and health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- A sign or poster that notifies food employees to wash their hands is not provided and/or is not clearly visible at all food preparation and warewashing handwashing sinks used by food employees.
- Using a bowl to dispense rice. Food in contact with soiled equipment or utensils.
- Raw foods (eggs) of animal origin stored over ready-to-eat (RTE) (Plantains) food in the refrigeration unit.
- The food-contact surfaces of the following equipment were not observed sanitized: plates, spoons, cups and other food serving equipment.
- The following equipment food-contact surfaces were observed soiled to sight and touch: cutting boards.
- Refried beans at 85 °F hot holding at improper temperatures.
- The prepared ready-to-eat (RTE) tamales, beans, shrimp sauce, chips salsa, and refried beans in the refrigeration unit is not properly dated for disposition.
- Raw and/or undercooked eggs and beef is/are offered on the menu, menu board, table tent or brochure without proper disclosure.
- The cutting board(s) at the back warewashing area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
- The nonfood contact surface of the aluminum foil covering small table is not designed or constructed to be easily cleanable.
- The nonfood-contact surface of the exhaust hood system filters is not cleaned at an appropriate frequency.
- The front food preparation area handwashing sink faucet is not in good repairs - is leaking.
- There is no refuse container at the area immediately adjacent to the food prep and warewashing area hand sink.
