Manassas Health Inspections: Rodent Droppings At Assisted Living Home
Several restaurants and schools around the Manassas area recorded violations during recent inspections from the county health department.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Oct. 4 and Oct. 10.
COVID-19 restrictions have mostly disappeared around the state. Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Arbor Terrace Sudley Manor, 7750 Garner Dr Manassas, VA 20109
- Date inspected: Oct. 4
- Total violations: 19
- Three unauthorized personnel were observed present in the food preparation, food storage, or warewashing areas.
- The person in charge (PIC) is not maintaining daily oversight of the employees routine monitoring of food temperatures of time/temperature control for safety (TCS) food (milk) temperatures during cold holding.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Dented can of food observed stored on canned food items. The integrity of the food packaging is found to be compromised and therefore possibly exposing the food to potential contamination.
- Surfaces of the ice machine (inside) in contact with non-potentially hazardous food (ice) were observed soiled with accumulations of grime and debris.
- The food-contact equipment surface of the slicer machine is observed soiled with accumulations of grime and debris.
- Milk in the reach in refrigerator at 44°F, cold holding at improper temperatures.
- The prepared ready-to-eat (RTE) Chicken parmesan cooked on 9/19/230 and chicken BBQ cooked on 9/17/23 was held more than 7 days in the refrigerator, not discarded after 7 days.
- Observed the following food thawing using an improper method: Frozen orange juice container under non continuous running water. The water temperature was 74°F.
- Rodent dropping observed on the floor (corner) of the chemical storage room.
- The ECOLAB fruit and vegetables liquid cleaning tubing dispensing is not clean a dark slimy accumulation was observed inside the tubing. Fruits and vegetables may be contaminated with this residual.
- Dented cans products for credit, redemption, or return are not being stored in a separate designated area.
- Food (vegetables, ice cream and beans stored on the walk-in freezer and box of cereal on the dry storage area floor stored less than 6 inches off the floor.
- Fruits are not cleaning properly. Contaminated chemical cleaning in use.
- Clean equipment/utensils (silverware and plates) were found stored at the chemical storage shelves.
- An opened bag of plastic cups was store on the chemical storage shelf.
- The paper towel dispenser in the handwashing dishwasher machine area is not functioning properly.
- The floor under the dry food storage and clean equipment shelving are not cleaned as often as necessary to keep them clean.
- Less than 10-foot candles of light were noted in the walk-in cooler. 0.15 food candles of light measured in multiple location in the walk-in cooler.

- 2 dented cans were in the walk in cooler being used as prop stands for a shelf.
- The bottom shelf in the walk in cooler was being held up by 2 cans of food.

- Total violations: 1
- The bathroom door was propped open that leads into the kitchen area.

- The Person In Charge (PIC) was not able to provide documentation that all food employees or conditional employees were trained and informed of their responsibilities to report symptoms or diagnosis of, or exposure to, diseases transmissible through food.
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Raw egg stored above raw shrimp at walk in cooler.
- Chicken Stock and Alfredo hot holding at improper temperatures.
