Manassas Health Inspections: Roy Rogers, Blue Ridge Seafood
The Prince William Health District recorded violations at several facilities around Manassas and Gainesville during recent inspections.
MANASSAS, VA — Several facilities in the Manassas area recorded violations during recent health department inspections between Feb. 8 and Feb. 14.
Most COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Date inspected: Feb. 8
- Total violations: 12
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Observed in the walk-in cooler: raw animal food stored over ready-to-eat food in the refrigeration unit.
- The date marking system for prepared ready-to-eat (RTE) foods in the refrigeration unit is not in proper use.
- Observed chemical cleaning agent bottle, lighter, and spray can of WD40 lubricant stored in such a way that they could contaminate food preparation areas in the kitchen.
- Observed clear spray bottle containers of cleaning solutions that do not have a legible manufacturer label.
- The Person in Charge could not provide a food temperature measuring device.
- The food (case onions) on display is not protected from contamination from the hand sink splash. Lids to all the bulk dry food containers are not attached firmly.
- Food (case of broccoli) stored on the floor or food stored less than 6" above the floor.
- The nonfood-contact surface of the reach in freezer is not cleaned at an appropriate frequency.
- The nonfood contact surface of the shelfing next to the grill has accumulations of grime and debris.
- Womens toilet room door is not provided with a self-closing door.
- The light intensity is below 50 foot candles where a food employee is working with food.

- Total violations: 5
- There is no Northern Virginia Certified Food Protection Manager on duty during hours of operation.
- Raw chicken was stored above RTE food ( lettuce).
- The 3 vat sink hot water was not reaching 110 F.
- The three container in storage area, wasn't provided any labeled.
- Employees observed working in the food service area without proper hair restraints.

- Date inspected: Feb. 8
- Total violations: 4
- Through conversation and/or review of written policy, it was determined that the establishment's employee health policy (EHP) is not compliant with the Food Code because: no written policy available.
- The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Working containers of cleaning products in clear spray bottles were not properly labeled with the common name.
- Observed several cases of bread stacked on the floor in the walk-in cooler. All food must be stored 6" off the floor to allow cleaning.

- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Signage that notifies food employees to wash their hands was not provided and/or permanently affixed at all handwashing sinks used by food employees including men and women restroom.

- The CFPM could not provide a food temperature measuring device.
- Salt container is not labeled properly with the common name of the food stored in it.
- Employees observed working in the food service area without proper hair restraints.
- The kitchen floors are not cleaned as often as necessary to keep them clean.

- Total violations: 3
- Water from the handwashing sink at lower kitchen prep area and ware washing was measured at a temperature less than 100°F.
- The water temperature in the manual ware washing 3 compartment sink was below the minimum allowable limit of 110ºF. The observed temperature was 95ºF.
- The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Sliced tomatoes on the service line and in the reach in cooler (s); Lettuce salad on the service line.

- Date inspected: Feb. 10
- Total violations: 9
- Management, food employees or conditional employees were not aware or informed of their responsibilities in reporting symptoms or diagnosis of diseases transmissable through food.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- There was no soap available at the handwashing sink in the Kitchen and Front unit sink.
- A sign or poster that notifies food employees to wash their hands is not provided and/or is not clearly visible at all handwashing sinks used by food employees.
- The establishment uses the manual hot water sanitizing method, hot water immersion. The temperature of the water was 160 but it wasn't reading properly.
- There was no temperature measuring device in Sushi Refrigerator.
- Various bulk food containers were not labeled properly with the common name of the foods stored within them.
- Middle light bulbs in the Walk in Cooler # 2 burnt out and/or missing.
- Wet mop is not placed in a position that allows it to air-dry without soiling walls, equipment, or supplies.

- No hand towels available at handwashing sink in the front unit.
- Employees observed working in the food service area without proper hair restraints.

- Total violations: 15
- An employee was washing their hands at the 3 compartment sink.
- There was uncovered container of cut cantaloupe in the walk in refrigerator.
- There were several clean dishes around the restaurant that were soiled, covered in food product or were not clean to the touch or sight.
- The cutting boards were heavily scratched and scored, no longer easily cleanable.
- The fixin bar area had tomatoes (48F), Lettuce (50F) and salsa (50F) they were out of temperature.
- There were containers of food removed from the original that did not bare the name of the product.
- There were several wiping cloths around the kitchen that were not in sanitizer buckets.
- The scoop handle for the cole slaw was touching the food.
- An employee was using a plastic drinking cup to transport clean utensils to another area.
- There was equipment on the bottom shelf across from the 3 compartment sink that were no longer working.
- There was a spray nozzle attached on the hose at the service sink.
- The hose connected to the mop sink was laying inside the service sinks.
- There was a build up of cardboard boxes in the kitchen.
- The mops were laying inside of the service sink in a position that will not allow them to try properly.
- The overall facility is covered in dust, food debris and trash.

- Total violations: 4
- There reach in low refrigerator at the prep table was measured at 50F and the reach in 1 door that held the milk for frappes was not properly cold holding items.
- Several of the cold holding units did not have thermometers in the units.
- There were food in a low boy reach in refrigeration unit (50F) at the prep table that had food items such as sliced cheese (49F), shredded lettuce (55F).
- There were no hand washing signs in the restrooms used by employees.

- Total violations: 15
- Several employees went to place gloves before washing hands.
- The hand sink in the kitchen, bar and in the drink area had sponges, sanitizer buckets and brillo pads that were laying in the basin.
- There was no hand washing sign at the hand sink in the dishwashing area.
- There was no hand washing sign at the hand sink in the dishwashing area.
- The hand washing sink in the bar area was temp of 65F.
- Soups were being reheated in hot holding units.
- There was reduced oxygen being done that for steaks and held for longer than 48hrs without a HACCP Plan and or variance.
- There were big batches of cut cabbage in the walk in cooler that was covered right after being cut, also there was containers of prep salad in the walk in cooler that were covered on the bottom shelf, in the reach in salad cooler there were to-go salads in the top portion of the unit that were prepped earlier that morning.
- There were several food items around the restaurant that were removed from the original containers and not properly labeled.
- The sanitizer bucket with wiping cloths in them was made of a mixture of water and dish soap.
- The 3 compartment sink had 2 basins that were not air gapped, the prep sink was also not air gapped.
- The ceiling above the cooking/plate area are heavily covered in grease, debris and dust.
- The area behind the restaurant is cluttered and harboring items that are not necessary for the restaurant.
- There were utility lines above the prep unit that were hanging close the top of the prep unit.
- The great dane walk in freezer did not have enough light to properly see and work.
