Manassas Restaurant Inspections: Up To 15 Violations At Eateries

Health inspectors found as many as 15 violations during recent inspections in Manassas and western Prince William County.

MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between May 1 and 22.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

  • Observed an open container of employee food stored on dry storage shelf near the cookline in the kitchen. Observed an open employee beverage stored near the microwave on prep table in the kitchen.
  • No hand drying provisions were provided at the handwashing sink near the Amerikooler Walk in Cooler and the mop sink in the kitchen.
  • Hot water from the following hand washing sinks was measured at a temperature less than 100F: 1. Hand washing sink #1 near prep table in the kitchen was measured at a temperature of 75F. 2. Hand washing sink #3 near the mop sink in the kitchen was measured at a temperature of 68F. 3. Hand washing sink in Women's toilet room was measured at a temperature of 88F 4. Hand washing sink in Men's toilet room was measured at a temperature of 74F.
  • Refrigeration unit was not capable of holding time/temperature control for safety (TCS) foods (Coleslaw (50F), sliced tomatoes (52F), and potato salad (48F)) in a cold holding temperature range of 41-45°F. The following unit is not able to maintain internal items at a temperature of 41°F or less: Turbo air 3 door prep reach in cooler near prep table in the kitchen.
  • Observed an unlabeled sauce inside squeeze bottle and an unlabeled spice shaker above the Supera 2 door reach in prep cooler in the kitchen.
  • Observed employee wearing a bracelet (jewelry) while frying chicken on the cookline in the kitchen.
  • Observed wet wiping cloths stored on the dry storage shelves near the registers in the dining room.
  • Turbo air 3 door prep reach in cooler is not able to maintain TCS (time/temperature control for safety) foods at a temperature of 41°F or less.
  • Observed ceiling vents with encrusted dust build up near the back entrance in the kitchen. Observed the ceiling vent with encrusted dust build up in the women's toilet room in the dining area.
  • Observed shelves with encrusted dust build up above the prep table and the Supera 2 door reach in prep cooler in the kitchen. Observed the shelves with encrusted dust build up above the 3 compartment sink in the kitchen. Observed the seal (gasket) with encrusted dirt build up on the door of the Amerikooler Walk in Cooler.
  • Observed two mixed valve faucets leaking at the 3 compartment sink in the kitchen.

Violations:

  • The following items need to be corrected before the first routine inspection:
  • The water heater temperature needs to adjusted to allow hotter water at the 3 compartment sink.
  • Obtain a thin probe food thermometer.
  • Wood shelves and tables need to be resurfaced/cleaned.
  • Remove all toxic/poisonous chemicals from the food area.
  • Keep restroom door closed during operational hours.
  • Remove clean dish shelving from beside the mop sink.
  • Add air gap at the 3 compartment sink.
  • Place an ambient air thermometer in each cold holding unit.
  • Clear away all unused equipment, clean the meat slicer.
  • Write the name on container for which food items are stored in.
  • No foil/towels lining shelves.
  • Do not reuse single service food containers.
  • Keep all drinks in a designated area away from food and have lid with a straw to drink from.
  • Clean the ceiling tiles and walls.

  • There was no verifiable employee health policy available at the time of the inspection.
  • During the inspection there were 2 cartons of pasteurized liquid eggs sitting at 61F on the counter. Also in the walk in cooler there were liquid pasteurized eggs (46F, 45F, 46F, 47F), sliced pasteurized american cheese (46F, 45F, 46F), pasteurized swiss cheese (46F), shake mix bags (46F, 46F) shake mix cup (47F), sliced deli ham (46F).
  • The walk in cooler door was missing the ball catch at the top part of the door and there was a portion of the door sweep that was missing to the walk in cooler.
  • There was y connector attached to the mop sink faucet the placed the back flow prevention under pressure.

  • Observed wet wiping cloths stored on the floor underneath fryers on the cookline in the kitchen.
  • Observed dry storage shelves above the ice machine with encrusted dust build up near the 3 compartment sink in the kitchen.
  • The faucet at the 3 compartment sink near the ice machine in the kitchen was observed soiled with an accumulation of dust, dirt, food residue, and/or other debris.
  • Observed the floor and the walls with encrusted dirt build up behind the ice machine near the cookline in the kitchen.

  • Dispensing and/or in-use utensils improperly stored between use as follows: observed rice scoop near hold holding unit (crockpot) stored in room temperature (71F) water on prep counter in the kitchen.
  • Heavily soiled handkerchief was in direct contact with clean dishes above the 3 compartment sink in the kitchen.
  • Single-service and/or single-use articles were improperly stored (not inverted) above prep cooler near the cookline in the kitchen.
  • Observed cardboard liner on the shelves underneath the prep counters near the cookline in the kitchen. Observed aluminum foil on the shelf underneath the stove and the fryer in the kitchen.
  • Observed vegetables (carrots and broccoli) were stored in grocery bags in the Mr. Winter Walk in freezer in the kitchen.
  • Observed wooden spatula hanging above prep counter near 3 compartment sink in the kitchen.
  • Observed shelves with encrusted dirt build up inside the Mr. Winter walk in cooler, above the 3 compartment sink, and inside Coca cola glass display cooler near the cookline in the kitchen.
  • Observed the floor with encrusted dirt build up inside the Mr. Winter Walk in freezer near the cookline in the kitchen.
  • Trashcans were not provided at the hand washing sinks near the cookline in the kitchen.
  • Observed couch stored in the shared dumpster area near the establishment.

  • During the pre-opening inspection the following was observed and needs to be corrected by the first routine inspection:
  • Add a double check valve to the mop sink to prevent backflow breaking.

  • Obtain the heat indicator test strips for the dish machine.
  • Cover all food items that open.
  • Keep tools and nonfood items out of the dry food area.
