Manassas Restaurant Inspections: 17 Violations At 1 Location
The health department visited kitchens at several restaurants and schools around Manassas, including one place with 17 violations.
MANASSAS, VA — The Prince William Health District visited kitchens at restaurants and schools around Manassas during recent inspections. Officials conducted the most recently published round of inspections between April 27 and May 3.
Many COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

- Observed food employees using improper handwashing procedures, rinsing hands with water.
- A food employee was observed handling the following ready-to-eat food using their bare hands: Cheese
- A sign or poster that notifies food employees to wash their hands is not provided at the male toilet room handwashing sinks used by food employees.
- Soap was not provided at the hand washing lavatory in the food preparation area.
- Raw unpasteurized shell eggs store next to pasteurized egg parties in the food preparation reach in refrigerator. Raw animal food holding in a manner that may cause cross contamination of to ready-to-eat food (RTE).
- The food preparation table was not properly wash, rinse and sanitized.
- Ice machine has accumulations of pink growth. Equipment used for storage of packaged or open food items was observed with visible accumulations of soil and debris.
- The chlorine sanitizing solution of wiping cloth bucket at the food preparation area, was not at an acceptable concentration (less than 50 PPM)
- Cheese and shredded lettuces at 46°F in the reach in refrigerator, cold holding at improper temperatures.
- The certified food protection manager is not able to provide complete written procedures for the use of time as a public health control with the cheese.
- The front serving area wiping cloth chlorine sanitizer concentration is more than 200 PPM.
- The methods used for cooling were not adequate. Cooling burritos and shredded lettuces in uncovered containers in the walk in cooler.
- Employees observed working in the food service area without proper hair restraints.
- When tested, no sanitizer chlorine chemical sanitizer was found in the wiping cloth bucket storing wiping cloths used on food contact surfaces at the food preparation area.
- The coffee maker is leaking to the floor and the upright two glass door refrigerator is not holding proper cold holding temperatures.
- The floors of the front serving and the dry storage area are not cleaned as often as necessary to keep them clean.

- Containers of RTE foods in the walk-in cooler must be date marked with the date of preparation. Ready to eat (RTE) foods that are also time/temperature control for safety (TCS) foods may be held for a maximum of 7 days with the day of preparation counting as day 1.
- The faucet at the 3 compartment sink must be replaced or repaired so that it extends to all 3 compartments. Remove the fabricated extension as it is not easily cleanable. Remove the extension at the mop sink as well as the faucet can reach both compartments.
- Remove the extensions on the waste lines from the 3 compartment sink so that they don't extend down into the floor drains.
