Manassas Restaurant Inspections: 21 Violations At 1 Place
Recent inspections from the county health department found 19 violations and 21 violations each at eateries in the Manassas area.
MANASSAS, VA — Several restaurants and schools in the Manassas area recorded violations during recent health department inspections between Feb. 2 and 14.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

Violations:
- Poor handwashing procedures observed.
- Employees are not properly sanitizing cleaned multiuse equipment and utensils.
- Employees are not aware of the reporting procedures concerning information about their health and activities as they relate to diseases that are transmissible through food.
- This food establishment has not established procedures for cleaning up vomiting or diarrheal events that happen in the facility.
- Food employees are not washing their hands before engaging on food preparation. Food employees observed with soiled hands and arms.
- Soap was not provided at the hand washing lavatory in the warewashing area.
- The handwashing station at the warewasihng area is being used for purposes (storing equipment) other than washing hands.
- Dented baby corn and ouster sauce found in the dry storage area shelves. The integrity of the food packaging is found to be compromised and therefore possibly exposing the food to potential contamination.
- Using a food bowl to dispense food. Food in contact with soiled equipment or utensils.
- Uncovered flour, sugar and other containers on the kitchen floor.
- The following equipment food-contact surfaces were observed soiled to sight and touch: cutting boards.
- This food establishment does not have proper sanitizer to properly sanitize food contact surfaces of equipment and utensils. The food-contact surfaces of all equipment and utensils were not observed sanitized.
- The prepared ready-to-eat (RTE) rice and chicken in the refrigeration unit were not properly dated for disposition.
- Food containers of flour and sugar stored on the floor or food stored less than 6" above the floor.
- Employees observed working in the food service area without proper hair restraints.
- Manufacturer containers (soy source) were observed reused for the storage of food.
- The nonfood-contact surface of the following equipment is not corrosion resistant, nonabsorbent, and/or smooth: the two wooden tables in the kitchen and the microwave oven stand, and the cardboard covering walk in cooler shelving.
- There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
- Observed the floor drain in front of the food preparation and cooking handwashing sink without a greater cover.
- Handwashing facilities in the kitchen food preparation and warewashing area are unclean and not maintained.
- Facility is storing unnecessary items (old unused equipment in the dry storage room and kitchen floor) to the operation or maintenance of the establishment.

- A sign or poster that notifies food employees to wash their hands is not provided at the female toilet room used by food employees.
- Raw animal food (beef) stored over ready-to-eat (cooked beef) food in the walk in refrigerator.
- The food-contact surfaces of the following equipment were not observed sanitized: equipment cleaned in the food preparation sink.
- Observed pork cooked yesterday in the refrigerator at 48°F not being adequately cooled to prevent the growth of harmful bacteria.
- The prepared ready-to-eat (RTE) refried beans in the refrigeration unit is not properly dated for disposition.
- Food (bags of onions an plastic bags of tortillas stored on the floor and less than 6 inches off the floor.
- Salad bar food not protected from contamination. It is not covered and not protected by salad bar food guards/sneeze guards.
- The nonfood contact surface of the cardboard covering walk in cooler shelving is not designed or constructed to be easily cleanable.
- The nonfood contact surface of the wooden shelving in the back area is not designed or constructed to be easily cleanable.
- The nonfood-contact surfaces of the following equipment (freezers, coolers, refrigerators doors) were observed soiled with an accumulation of dust, dirt, food residue, and/or other debris:
- The warewashing area handwashing sink is not clean and/or maintained.
- Mop/service sink block, the facility is storing unnecessary items to the operation or maintenance of the establishment in front of the mop/service sink.
- The toilet doors and floor are not cleaned as often as necessary to keep them clean.
- Grease from the exhaust hood system at the cook line was observed dripping onto food contact surfaces below.
