Manassas Restaurant Inspections: 24 Violations At 1 Eatery

Recent inspections from the county health department found as many as 24 violations at eateries in and around Manassas.

MANASSAS, VA โ€” Some restaurants in the Manassas area recorded violations during recent health department inspections between Feb. 26 and March 7.

Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection.   • Throughout there was notice of various violations pertaining to hand washing, certified food protection manager certification, and properly wash, rinsing and sanitizing equipment.
  • There was no person/employee that has a certified food protection manager certificate.
  • There was no verifiable employee health policy available at the time of the inspection.
  • There was no procedure available during the inspection to show how to clean vomit and diarrhea.
  • An employee had an open drink container on the counter.
  • An employee was rinsing their hands at the 3 compartment sink.
  • An employee was drying hands with a cloth towel multiple times.
  • The hand washing sink dish washing area had cleaning products in the basin.
  • The hand washing sink in the dish washing area was not working.
  • The person in charge did not know how to properly set up the 3 compartment sink. The dishwasher was not properly sanitizing dishes.
  • There were several sour cream containers that were out of date per the manufactured best by date on the containers.
  • There was various toxic chemicals and plant soil in the dishwashing area and around the kitchen.
  • There were several cold holding units that did not have ambient air thermometers.
  • The person in charge did not have a thermometer to measure food temperatures.
  • There was insect glue paper strips around the kitchen and dishwashing area hanging from the ceiling.
  • There were food items, ingredients in nonfood grade containers in throughout the facility.
  • The facility was using single service containers as food containers.
  • There was several pieces of equipment in the kitchen and dishwashing area that was not properly working.
  • There were several raw wood planks and milk crates in the facility being used as nonfood contact surfaces.
  • The hand sinks, 3 compartment sink and the dishwashing area had significant spacing that is not easy to clean behind, also there was sign of wear and tear on the caulk and mold build up.
  • The hot water at the 3 compartment sink was temp at 101F.
  • The faucet at the hand sink in the kitchen was leaking, also the faucet at the 3 compartment sink was leaking.
  • The facilities walls, floors and ceiling were brown and need to be cleaned.
  • There was several unnecessary items in the facility that did not pertain to the facilities function. There was an area of cluttered items on the opposite side of the prep area.

  • The person in charge failed to have no violations of priority items during the current inspection.
  • Poor handwashing observed. Food employees observed with soiled hands and arms, an indication of poor personal hygiene.
  • Prepared frozen containers of soup (in the freezer) and held in the food establishment for more than 24 hours is not clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded.
  • Observed the following food thawing using an improper method (standing water in the 3 comp sink).: Meat and bones on meat.
  • Food (boxes of oil and flour paper bags in front of the walk-in cooler stored on the floor and/or food stored less than 6 inches off the floor.
  • In-use utensils to serve rice stored in a container of water (room temperature (72ยฐF, less than 135ยฐF, improperly stored between use.
  • Manufacturer containers of kimchi were observed reused for the storage of cut lemons.
  • Single-service or single-use items (boxes of plastic food containers) found stored next to the mop sink.
  • The nonfood contact surface of the cardboard covering the walk-in cooler shelves is not designed or constructed to be easily cleanable.

  • There were multiple containers of food that were not labeled with the name of the ingredient/food item inside.
  • There were food items, ingredients in nonfood grade containers in throughout the facility.
  • There were several containers of utensils that were not inverted/stored with handles outward to prevent contamination. A metal stand that was inverted and not keeping food equipment at least 6in off the floor, the stand mixer was uncovered.
  • There was single service containers being used as scoops and storage.
  • There was single service items that were not inverted/stored to prevent contamination.
  • Several of the refrigeration units were missing bottom front panels. The hand sink was not properly draining.
  • Several of the shelves in the reach in coolers were rusted and no longer easily cleanable.
  • There was no air gap at the 3 compartment sink.

Cook Out: 8502 Centreville Rd Manassas Park, VA 20111

Violations:

  • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
  • Water from the handwashing sink at front area was measured at a temperature less than 100ยฐF. _ Hot water 66ยฐF measured.
  • Observed an unlabeled (label was removed) can in the food storage shelving.
  • Cooked ground beef (on top of ice on the food prep area) cold holding at improper temperature, 48ยฐF temperature recorded.
  • Covered container of cooked ground beef (temp 48ยฐF) observed on the 2nd shell in the walk-in cooler. The methods used for cooling were not adequate.
  • All the handwashing station soap dispensers were observed in a state of repair.
  • The 3 compartments sink faucet connection is leaking.
  • There is no covered receptacle for sanitary napkins in the toilet room used by females.
  • There is no refuse container at the area immediately adjacent to the front and warewashing areas handwashing sinks.
  • Observed standing water on the food storage area and in the walk-in cooler #1 floor.

  • Various 'Duties of the PIC' are not met. See below. Through discussion - we were able to address the various issues/violations and corrective action was taken with proper practices implemented.

  • Cooking sheet if raw chicken being stacked on cooking sheet of raw beef - uncovered.
  • Raw foods (chicken and beef) being stored in contact with other racks and uncovered.
  • RTE TCS foods must be marked with a time/date to indicate when it was made/to be discarded. Multiple dishes created and held are not marked with any time or date marking.
  • Chicken being kept by broccoli outside of the cold holding unit. No marking of time/temp.
  • Jumbo shrimp/prawn being thawed in original packaging fully submerged in bucket of stagnant water.
  • Various bins with powders not identified with name of food/ingredient.
  • Various cooking sheets of raw chicken and beef are being stored on the floor under the storage racks in the WIF. Also stacked on each other.
  • Scoops for various food bins are being kept inside of the food. Some scoops are also cups without the required handle.
  • Cardboard and foil used on shelving of NFCS.
  • No heat test strips for the dish machine.
