Manassas Restaurant Inspections: 27 Violations At 1 Location

The Prince William Health District recorded 27 violations at one restaurant in Manassas during a recent round of inspections.

MANASSAS, VA — The Prince William Health District visited several restaurants around Manassas during their most recently published round of inspections. The inspections occurred between May 4 and May 10.

Many COVID-19 restrictions have relaxed around the state, and health inspectors are returning to conduct many restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.

Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.

      • A sign or poster that notifies food employees to wash their hands is not provided and/or is not clearly visible at all handwashing sinks used by food employees.
      • Different types of raw animal foods stored in such a manner that may cause cross contamination. Chicken, Fish & Beef on bottom shelf of WIC improperly arranged; raw chicken stored next to pasteurized eggs in reach in cooler; and uncovered pasteurized egg mixture on bottom shelf of reach in.
      • There is no refuse container at the area immediately adjacent to the hand sinks.
      • Materials used to cover floor in the ware washing area and the ceiling in the dry storage area were in a manner that was not easily cleanable.

      • The cut lettuce salad was found being cooled (after preparation within the hour) in the Traulsen 4 door reach-in on the cookline.
      • There is a "Y" adapter on the faucet at the mop sink that allows 2 hoses to be attached. Mop sink faucet vacuum breakers are not designed for the continuous pressure created by the "Y" adapter/hoses.

    • Date inspected: May 5
    • Total violations: 27
      • Employees are not aware of or are not monitoring the cooking, cooling, hot holding, and/or reheating temperatures of potentially hazardous food.
      • The person in charge failed to identify equipment not working properly and not maintained in a clean condition. Observed walk in cooler with condensation leak; cooling units without working ambient thermometers; ware washing and sanitizer buckets without test strips to measure adequate availability of sanitizer; handwashing sink without hot water and slow drain; no date/labeling system for TCS foods; and inadequate lighting in the walk in cooler.
      • The person in charge is not able to provide a verbal or written policy for preventing the transmission of foodborne disease by an employee who has a disease or a medical condition.
      • The food establishment does not have written procedures for cleaning up vomiting or diarrheal events that happen in the facility.
      • A sign or poster that notifies food employees to wash their hands is not provided and/or is not clearly visible at all handwashing sinks used by food employees.
      • There is no written agreement or statement from the supplier or aquaculturist stipulating that the Fish used for Ceviche, raw-marinated, partially cooked, or marinated-partially cooked fish served or sold in ready-to-eat form, is aquacultured and/or the records are not retained in the food establishment for 90 calendar days beyond the time of service or sale of the fish.
      • Raw eggs stored next to ready-to-eat vegetables in the walk in refrigeration unit.
      • Unwrapped or uncovered food in the Walk in cooler near a condensation leak.
      • Cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hours
      • Tomatoes & cheese stored in the reach in cooler were observed cold holding at improper temperatures
      • The prepared ready-to-eat (RTE) potatoes in the refrigeration unit are not date marked.

      • The Person in Charge could not provide a food temperature measuring device.
      • The ambient (air/water) temperature measuring device (dual or degrees F) located in the walk in cooler is not easily readable.
      • Food packaged in the establishment is not labeled as specified in law.
      • An exterior door was observed to be open. This may allow the entry of insects and rodents.
      • Food storage under leaking water lines, sewer lines or lines where water has condensed - Walk in cooler.
      • The nonfood-contact surface of the equipment is not designed or constructed to be easily cleanable
      • There is no chemical sanitizing test kit present to ensure the chemical sanitizing solution used is at the proper concentration.
      • The nonfood-contact surface of the ware washer sanitizer bottle is not cleaned at an appropriate frequency.
      • The sink basin at the front hand sink is slow to drain.
      • A condensate drain line servicing the walk in cooler was emptying liquid waste directly onto the floor of the walk in cooler floor.
      • The quantity of refuse exceeded the storage capacity of the exterior storage enclosure.
      • Wet mop is not placed in a position that allows it to air-dry without soiling walls, equipment, or supplies.
      • Observed that inadequate lighting (2.7 fc ) was provided in the walk-in refrigerators, walk-in freezers, and/or dry storage areas.
