Manassas Restaurant Inspections: 29 Violations At Restaurant
Recent inspections from the county health department found as many as 29 violations at eateries in and around Manassas.
MANASSAS, VA — Some restaurants in the Manassas area recorded violations during recent health department inspections between March 8 and March 21.
Health inspectors conduct most restaurant and other health inspections in person. However, some visits, such as those for training purposes, can be conducted virtually.
Violations typically focus on factors that can contribute to food contamination. The local health department can also perform a re-inspection to ensure that possible violations have been corrected.

For every observed violation, the inspector provides a specific corrective action that can be completed to rectify the violation. Sometimes these are simple, and violations can be corrected during the course of the inspection. Other violations are addressed later, and an inspector may conduct a follow-up inspection to ensure compliance.
Here are the most recent inspections from the Manassas area, according to the Prince William Health District. Of note, there were 29 violations at Petra Grill. The health inspector discussed all violations and corrective actions with the person in charge. A follow-up inspection will be scheduled as the restaurant corrects violations.

- At the frymaster sandwich assemble station there was a container of cheese slices temp at 64F and 67F. There was a container of sausage burritos that were in a 2 door low prep cooler that temp at 48F.
- The chemical sanitizer bucket concentration was measured above 100ppm.
- In the reach in cooler and sandwich assemble station there were covered containers of shredded lettuce temp at 57F and cut tomatoes 45F.
- A shelf with clean dishes stored is placed next to the mop sink without a separation to protect from contamination.
- On the rack next to the 3 compartment sink clean dishes were being stacked without properly drying first.
- There was packages of single use gloves used for food prep stored on a shelf with chemicals.
- There was a connector attached to the mop sink faucet the placed the back flow prevention under pressure.
- The plumbing system at the mop sink was leaking at the faucet.
- In the restroom that was used by females did not have a trash can with a lid.
- There were mops at the mop sink not in position to properly let them dry.

- Container of ibuprofen stored on shelving with single service items.
- Sliced tomatoes, cut 3 hours previously, found cooling on top of the Kool It 3 door prep reach-in refrigerator at 45 degrees; sliced tomatoes, cut 3 hours previously, found cooling in stacked, covered containers in walk-in cooler.
- Cooked gyro meat (beef) found cooling in Ikon 4 drawer refrigerator under grill at 50 degrees F; sliced gyro meat, cooked and cut off cone at 11am, found cooling in stacked, covered containers in walk-in cooler.
- There were no ambient air temperature measuring devices (thermometers) in the Kool It 3 door prep reach-in refrigerator or in the Ikon 4 drawer refrigerator under grill.
- Spray bottles (water, per CFPM) and various containers of spices were not labeled properly with the common name of the food.
- The front door of the food establishment was propped open upon arrival allowing the potential entry of insects and rodents (vermin).
- Large amounts of foods stored in open hallway accessible to patrons.
- Foods found stored on the floor in the walk-in freezer and walk-in cooler.
- Clean equipment including pots and pans were stored on the shelving with the food contact surface exposed to dust and other contamination.
- Single service foil containers were stored with the food contact surfaces up and exposed to possible contamination; large amounts of single service items were stored in the open hallway accessible to patrons.
- Various single use containers being reused to store other foods in throughout the kitchen.
- Single service items such as utensils and cups were found to be displayed unprotected (without proper dispensers) and exposed to contamination in the self service area.
- The cutting board on the Kool It 3 door prep reach-in refrigerator is discolored and scored.
- Grocery bags were used to store foods in, in the walk-in freezer.
- Plastic trash bags (soiled) being used to line shelving.
- The following refrigeration units did not appear to be holding temperatures of 41 degrees F and below: Ikon 4 drawer under grill refrigerator, Kool It 3 door prep reach-in refrigerator, front display case.
- The 3 plugs/stoppers for the 3 (4) compartment sink are missing and other items such as glasses are being used to block the flow of water out of the basins.
- There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution (chlorine).
- The wastewater pipes of the 3 (4) compartment sink extend down into the elevated floor drain, eliminating the air gaps.
- Various light bulbs throughout kitchen and hood system burnt out and/or missing.
- Adequate lockers or other suitable facilities are not provided for employees clothing and other possessions resulting in personal items such as a cell phone being stored on the prep table.
Thai Tyme: 10167 Hastings Dr. Manassas, VA 20110

- An employee was observed making ready to eat spring rolls with their bare hands.
- In the avantco deep freezer there was several containers of food that were uncovered.
- In the walk in cooler food was arranged in the order of shell eggs and raw chicken being stored over raw shrimp on a shelf.
- On the prep table there was container of lettuce that was sat in water.
- On the shelf of the prep table there was several medication bottles above the food.
- There was a container of chili oil thawing on the counter. In the prep sink there was raw meat thawing in a water bath.
- There were food items, ingredients and utensils in nonfood grade containers in throughout the facility.
- In the walk in cooler there was a shelf with food that was stored under the water line from the cooler fans.
- In between use utensils were in containers of water that were room temperature. There was single service scoops laying in the bulk food containers.
- There was several containers of utensils without the handles upward to prevent contamination.
- The facility was using single service items for food storage and for scoops in bulk food containers.
- There was foil lining on carts that held food containers.
- There was several wood utensils in the facility that were being used.
- The energy star dishwashing machine was not properly connected to drain water.

- The handwashing sink in the dough prep area is in disrepair (leaks) and has been completely shut off. Per staff, it is to be repaired later today.
- Wet mop observed on floor.
- Adequate lockers or other suitable facilities are not provided for employees clothing and other possessions resulting in personal items such as backpacks being stored on shelving with food.
